Job Details

Lala’s Brooklyn Apizza is located on the upper level at Grimm Artisanal Ales and Physica Winery in Williamsburg and is led by Chef Esther Stilwell. Opened in Summer 2023, the restaurant features our own eccentric take on the uniquely charred New Haven apizza style, with an ethereally thin crust made from our house-milled malted wheat, fermented with our own house sourdough culture, and baked in an Italian wood-fired oven. With a seasonally changing and locally sourced menu, Lala's has been featured in publications like Eater, The New York Times, Time Out, and more. Our kitchen team is completely cross-trained and works collaboratively. We are passionate about food, experimentation, and the intersection between beer, fermentation, and food.

We are looking for an experienced and energetic Sous Chef to join the Lala’s family full-time. The Sous will support the Chef and lead day-to-day operations in the kitchen. We are looking for a culinary professional that is passionate about fermentation, pizza, and local food. The Sous should be a detail oriented and organized individual who is excited to make a difference at Lala’s and grow with the company. The Sous will ensure food is always high quality, that the kitchen is kept orderly, and SOPs are followed correctly. The Sous will also help the Chef with development and roll-out of our seasonal and special menus and be a vital member of the Lala’s team.

Qualifications:

  • 4+ years of kitchen experience
  • Prior management or leadership experience 
  • Ability to perform physical requirements of the role including standing/walking for entirety of shift, bending, pulling, pushing, using stairs, lifting and carrying up to 55 pounds
  • Ability to work a flexible schedule including days, nights, weekends, and holidays

In addition to all Pizza Cook responsibilities, Sous Chef responsibilities include:

  • Leading the kitchen team on the floor, before, during, and after service. This includes but is not limited to keeping staff on task, quality control, answering questions, problem solving and training. 
  • Work with Chef to manage inventory by doing cycle counts while assisting in kitchen area organization
  • Filling out post-service reports highlighting service, event details, inventory notes, general or staffing concerns. 
  • Participating in and/or co-leading staff, event, and general team meetings 
  • Prompt monitoring and communicating over internal communication channels with Chef, management team, and FOH team when necessary
  • Offering suggestions and creative ideas to continue improving kitchen efficiency
  • Maintaining calm and professional demeanor during high volume/stress moments. 
  • Assisting Chef in research, development, and execution of seasonal and special menus
  • Comply with and enforce sanitation regulations, safety standards, and SOPs.
  • Assist Chef and Facilities manager with facility maintenance and upkeep.
  • Enforces kitchen policies, standards, and quality
  • Ability to perform and fill in all kitchen stations as needed. 
  • Other roles and responsibilities when necessary

Compensation Details

Compensation: Hourly ($26.00) plus tips

Estimated Weekly Tips: $320

Grimm Artisanal Ales is a Brooklyn-based brewery founded in 2013 by Joe and Lauren Grimm after nearly a decade of tinkering with fermentation. Grimm specializes in concise, elegant ales epitomizing the creative, experimental spirit of the American artisanal beer revolution. With each limited edition release, we seek to push the boundaries of style and flavor in order to create beers with the utmost depth and complexity.

For five years, Grimm operated as a nomadic brewery. Joe and Lauren would develop each recipe in the kitchen of their Gowanus apartment and travel to existing breweries near and far to craft their commercial beers.

In June 2018, they opened their permanent location in the East Williamsburg neighborhood of Brooklyn, NY.
