THE ROLE

The General Manager (GM) will work closely with the Management team to meet service, sales, HR, and other organizational objectives. The GM will manage day-to-day service operations of the restaurant and is responsible for continually defining and refining service. They will lead the hiring, training, and managing of all FOH staff. The General Manager will also manage the floor during service, perform a variety of administrative duties, and work closely with FOH and BOH management teams to execute the restaurant’s vision of service and maintain the quality & integrity of the food & beverage programs.

DUTIES AND RESPONSIBILITIES

DAY-TO-DAY FUNCTIONS

  • Ensure we are fully stocked on any and all provisions the wine bar needs to function at its highest peak performance; this includes but is not limited to: wine, paper, candles, glassware, silverware, light bulbs, beers, waters, etc.
  • Ensure menus are accurate, in good shape, and up-to-date.
  • Ensure all POS systems are accurate and up-to-date.
  • Ensure general upkeep of the place is neat & tidy, maintenance & cleaning schedules adhered to, etc.

FINANCIAL

  • Work to maintain all financial deadlines and reporting.
  • Ensure delivery of budget and KPI’s.
  • Efficiently manage operational and labor costs.

PEOPLE MANAGEMENT AND DEVELOPMENT

  • Check in regularly with staff to ensure they are maintaining and developing in their roles.
  • Ensure clock-in & clock-out times are being properly adhered to and recorded.
  • Create weekly schedules managing all requests while maintaining operational function.
  • Staff education – ensure the staff is up-to-date on all menu and create regular tracking mechanisms to quantify this, i.e. quizzes, etc.
  • Work with HR on any issues or areas of compliance objectives.
  • Assist on any admin tasks that may come up.
  • Oversight of FOH hiring and training program in accordance with organizational standards.
  • Continual development of FOH employees by establishing performance expectations, providing ongoing feedback, and presenting quarterly performance check ins.
  • Assisting with leading the FOH team in directing staff and enforcing service standards.
  • Oversee all FOH hourly disciplinary action.
  • Reviewing hours for payroll and ensuring completion of tips reporting by the team.

SERVICE OPERATIONS

  • Making all day-to-day decisions to maintain quality restaurant operations.
  • Identifying operational, service, and/or fiscal issues, suggesting corrective action, and then executing the collective vision.
  • Maintaining proper flow of service (at the door, on the floor, and at the pass);
  • Upholding service standards, product quality and cleanliness; continuous communication with kitchen and all FOH staff.
  • Guests management and cultivating relationships with new and returning guests.
  • Ensuring reservations systems is set up and being used optimally.
  • Ensuring press and VIP service standards and protocol are followed.
  • Executing events and private dining.
  • Ensuring proper stocks of service supplies (paper goods, linens, etc.)

FOH LEADERSHIP

  • Serve as a representative for regular inspections by government agencies.
  • Oversees all customer service responses and all guest recovery efforts, including but not limited to: online feedback, guest complaints, lost & found, and immediate service recovery, taking any and all appropriate actions to turn dissatisfied guests in to return guests.
  • Assist in investigating and resolving guest complaints concerning food quality and service.
  • Holding all managers and staff responsible for knowledge of food and beverage menus, as well as all new and developing offerings.
  • Ensure guests leave having had the best wine service experience.

ABOUT YOU

  • Food Handler’s Certification required (will support your efforts toward this if you don’t already have)
  • Exceptional service skills, food and beverage knowledge required
  • Proven ability to effectively manage and mentor employees
  • Technical proficiency in restaurant POS, reservation systems, Microsoft Office strongly recommended
  • High volume, fast-paced, high profile restaurant experience preferred
  • Ability to demonstrate quick thinking and adaptability in a constantly changing environment
  • French speaking is a plus
  • Any required city/state licenses or permits
  • The physical demands for this position are seeing, hearing, speaking, reaching, lifting up to 50 pounds, sitting, standing, for 5 to 10 hours, bending, and moving intermittently during working hours. These physical requirements may be accomplished with or without reasonable accommodations.

 


Compensation Details

Compensation: Salary ($90,000.00 - $100,000.00)

Ten years after the opening of Compagnie des Vins Surnaturels in SoHo, Experimental Group is set to open its second Compagnie des Vins Surnaturels wine bar in New York: La Compagnie Wine Bar Flatiron (La Compagnie Flatiron). Following the wine bar, the group will also open Experimental Cocktail Club New York (ECC New York). Both bars will be located at 6 West 24th Street in New York’s Flatiron neighborhood, with ECC’s subterranean bar tucked underneath La Compagnie.

Hundreds of bottles from small producers, both local and international, will be the highlight of La Compagnie Flatiron, with a nod to French and American estates served by a team of passionate sommeliers. Programming will include in-house events such as the legendary "Jurassic Park" Jura wine party, a continuation of the dynamic “Wine Boot Camp'' education series, and a daily “Mystery Wine” to taste.

Chosen to perfectly match the vast selection of Champagne, a wide choice of hyper-local and inventive seasonal snacks, as would be enjoyed at a French dinner party, will be available to order. The evening menu, curated by Managing Partner and Executive Chef Eric Bolyard, will revolve around luxurious grilled meats, sustainable seafood, and regional vegetables designed to accentuate a fine selection of Burgundies and Bordeaux, Barolos and Brunellos, and even old Californian and other American vintages.
