Job Title: Kitchen Manager

Summary:

Shibumi has opened our newest venture, Kushiba, in Echo Park.

The Kitchen Manager is responsible for the day-to-day operations of the kitchen, including overseeing food preparation, managing inventory, and ensuring compliance with health and safety regulations. The Kitchen Manager must also be able to motivate and lead a team of kitchen staff.

Essential Duties and Responsibilities:

  • Oversee the preparation and cooking of food in accordance with recipes, menus, and food safety regulations.
  • Manage the kitchen staff, including scheduling shifts, training, and performance reviews.
  • Order and maintain food and inventory levels.
  • Ensure the kitchen is clean and sanitary in accordance with health department regulations.
  • Prepare reports on kitchen operations, including food costs and labor hours.
  • Assist with the development and implementation of new menu items.
  • Comply with all applicable laws and regulations.

Qualifications:

  • High school diploma or equivalent.
  • 5+ years of experience in a kitchen management role.
  • Strong culinary skills and knowledge of food safety regulations.
  • Excellent leadership and interpersonal skills.
  • Ability to work independently and as part of a team.

Compensation Details

Compensation: Hourly ($25.00 - $28.00) plus tips

KUSHIBA~ 串 バー which translates to “stick/skewer” “bar”, is a 50 seat restaurant and bar serving Kushikatsu. Kushikatsu is a sub category of the term “izakaya” -Japanese bar with food- that started in downtown Osaka in the Shinsekai district in the 1920's.

Kushikatsu (or Kushiage – what they call it in Tokyo) is an Osaka delicacy. They are skewers that are coated in a light and crispy batter and then deep-fried to perfection. KUSHIBA~ will offer 20 skewers with a variety of meats, seafood, and vegetables.

The skewers will be served with a variety of dipping sauces, including a traditional Japanese sweet and sour sauce and a spicy sesame mustard dip. In addition to kushikatsu, KUSHIBA will offer a selection of other Japanese dishes, including chilled tofu, potato salad, chopped raw fish and steamed wagyu corned beef to name a few. The restaurant will have a full bar, which includes Japanese beers, sake, shochu, and cocktails. No wine is served, but there will be an off menu Champagne list.

The interior of the restaurant is decorated with period-appropriate furnishings. Burnt cypress surrounds the room and early Showa Era furniture and fabrics are expressed throughout, offering a truly immersive dining experience that will transport guests back to Showa era Japan.
KUSHIBA~ is the perfect place to experience the unique culture and cuisine of Japan, creating a piece of Osaka in Echo Park.
