The overnight chef will deliver exceptional dishes for room service and any guests using the drawing room in these twilight hours. You will be responsible for a small team and throughout your shift you will prepare for the next day’s events and breakfast shift.
MAIN DUTIES:
- Run the operation of the kitchen throughout the night
- Have a good command of the menu and the ingredients required
- Deliver exquisite dishes that maintain Firmdale standards and continue to exceed our guest expectations
- Guide and oversee the kitchen team
- Deliver orders in an efficient time
- Maintain strict health, safety, and food hygiene standards
- Mise en place and stock control of the kitchen
- Prepare and in-depth handover for the senior chef on duty the following day
REQUIREMENTS:
- Previous experience as a Chef de Partie or Line Cook within a 5 star hotel or luxury restaurant
- Knowledge of a variety of local and international food ingredients and correct methods of preparation and food allergy specifications
- Excellent communication skills
- Excellent team working skills
- Superb attention to detail and driven by delivering exception standards
