The Server works in collaboration with the Busser and floor staff to provide an exceptional, efficient dining experience for Ettan guests. This position serves as the primary point of contact for diners, leading the flow of their dining experience, answering menu questions, troubleshooting any issues and communicating with the kitchen and floor staff to optimize the flow of service. PRIMARY DUTIES/RESPONSIBILITIES- Extend a genuine welcome and good-bye to all Ettan guests
- Know table and seat numbers, standard and special table arrangements
- Perform opening/closing server duties
- Oversee specific section of tables while also assisting fellow servers as possible
- Use of POS for: starting tabs, inputting orders; coursing orders correctly; transferring and closing checks
- Process credit card, cash and gift card payments
- Maintain awareness of the status of the restaurant as a whole during service to optimize collaboration and flow of service
- Maintain in depth knowledge of Ettan's beer, wine, cocktails, and spirits
- Maintain in depth knowledge of Ettan’s food menu; awareness of dishes with potential allergens; ability to describe dishes, answer guest questions confidently and build an ideal menu for the table
- Communicate with floor staff about necessary table arrangements before and during service
- Maintain cleanliness and orderliness of the service areas and restaurant in general
- Communicate with management about any disappointed guest experiences or special praise for their Ettan experience
- Assist in training of new floor staff
- Complete daily set-up, breakdown and side work
- Participate in daily lineup discussions
- Attend food & beverage education sessions as available
- Ability to effectively communicate with and mentor staff
- Ability to maintain calm and focus under pressure
- Solid foundation of spirit, cocktail, beer & wine knowledge
- Must be authorized to work in the United States
- Current Food Handler and Unlawful Harassment training certificates
- Responsible Beverage Service Training

RUNNER JOB SUMMARY
The Runner works in collaboration with the expeditor and floor staff to keep up a steady flow of plated meals from the kitchen to the guest tables. This position provides important communication between the chefs and expeditor and floor staff to ensure correct and properly prepared dishes are served to diners. PRIMARY DUTIES/RESPONSIBILITIES
- Extend a genuine welcome and good-bye to all Ettan guests
- Proficient knowledge of seating patterns, table and seat numbers
- Be aware of the number of newly seated guests and incoming orders and communicate with the expeditor and chef
- Carry complete dishes from the kitchen pass to the guest’s table at the direction of the food expeditor
- Travel through the restaurant in a composed, orderly, safe fashion to ensure dishes are intact when they reach the guests
- Maintain in depth knowledge of Ettan food and drink; able to recognize dishes & drinks by sight; know all dishes that contain potential allergens
- Scan the dining room when going to and from the pass, looking for any guests who may need the attention of their server and communicate with the service staff as needed
- Clear dishes to the dish station, when possible, provide any missing silverware as needed when you deliver food to tables
- Communicate any discrepancies with orders or dishes to the Chef, Expeditor, Server or FOH management
- Maintain cleanliness and orderliness of the kitchen pass area and restaurant in general
- Work as a team with all floor staff to ensure the best guest service possible
SECONDARY DUTIES/RESPONSIBILITIES
- Assist with preparing the kitchen pass for service, organizing and cleaning
- Runner side work responsibilities (maintaining clean plate wipes, stocking paper rolls and ink, silverware, taking out paper trash)

BUSSER/BACKSERVER JOB SUMMARY
The busserbackserver works in collaboration with the Servers and all floor staff to maintain a clean, orderly dining table for guests and to set tables in preparation for new diners. This position is responsible for the removal of empty, dirty plates from guest tables in an efficient and non-intrusive way, stocking clean, polished silverware and glasses, and resetting tables once guests have left. - Clear, clean, sanitize and reset tables with place settings (turning tables)
- Keep the banquette, chair seats and floor free of debris and water spills
- Work as a team with other busser /backserver and floor staff who are assisting with turning tables
- Know the food and drink menu items by sight
- Maintain cleanliness and orderliness in the beer garden, patio and restaurant
- Scan the dining room when going to and from the kitchen, looking for any guests who may need the attention of their server and communicate with the service staff as needed
- Assist with private dining room Abajo, carrying dirty plates to the dish pit, dirty glassware to the bar
- Communicate with management about any disappointed guest experiences or special praise for their Ettan experience
- Assist with maintaining dirty linen bags; keeping an empty bag securely tied in the wire frame, replace as needed, bring the full bag to trash room and place on the staging area for dirty linen
- Maintain bins of recycling and trash on the server side of the dish pit and take out at the end of the shift
- Sweep floors as part of opening duties

The Bartender works closely with Barbacks to provide exceptional drink and food service to bar and restaurant guests.
