BILLIONAIRE LOUNGE is expanding its team and looking for a strong Chef de Cuisine to help lead its kitchen. As Chef De Cuisine, you will possess excellent knife skills, have a deep knowledge of fish and meat butchery and develop a full understanding of how each station needs to be run–including bread production. Strong organizational skills are a must.
BILLIONAIRE fuses a ‘Golden Era’ swagger, with modern-day Philly energy, to create an entirely new dining experience.
Responsibilities include (but not limited to):
Menu Development
Maintain consistency of dishes
Maintain food and labor costs
Department Of Health compliance
Train Staff (both back and front) on new dishes or specials
Maintaining walk-ins and dry storage areas
Expedite service
Ensure close down procedures are followed
Candidates should have extensive experience in casual and upscale dining management, high volume and quality production.
Familiarity with seasonal products and local vendors, a plus. Reverence for quality product, a must.
Positive attitude and good team building skills.
Ability to problem solve, maintain and improve upon systems.
Must be able to lead by example and seriously cook.
