DuPage Golf is looking for a talented Sous Chef to come be part of our team at Greenway Tap in Addison, Illinois. The restaurant is located within a brand new modern clubhouse with dining room, full bar and outdoor terraces overlooking the award-winning golf course, The Preserve at Oak Meadows. Job Summary
This position assists the Chef in day-to-day kitchen operations in the food service operations at the District golf facilities in order to maximize profitability and ensure customer satisfaction.
Essential Duties and Responsibilities:
• Lead kitchen personnel in the daily functions of kitchen operations at District golf facilities in the Chef's absence.
• Maintain and cook on kitchen line in a professional manner with an emphasis on quality, efficiency, and consistency. Ensure proper plating of food to presentation standards.
• Assist Chef with staff training, motivating, and developing employees in kitchen operations.
• Enforce sanitation and cleaning guidelines to the DuPage County Health Department standards with line staff.
• Lead and assist employees in daily kitchen cleaning duties.
• Work with prep cook to assure restaurant and outlet prep is completed. Help with sandwich production for outlets and can cook at outlets, outdoor, and indoor events.
• Maintain food prep and storage areas cleanliness, and correct storage methods.
• Maintain best practices for inventory controls. Help receive and check-in products for quality and accuracy.
• Ensure proper labeling of food, storage of items, and rotation (FIFO).
• Light ordering responsibilities.
• Assist supervisor with the selection of staff, schedule, train, provide guidance and communicate day-to-day work activities, department expectations, and work rules. Relay and provide input regarding work performance, training needs and growth opportunities while promoting morale.
• Foster a working environment that promotes safe work habits; Become familiar with and observe all applicable safety rules, policies, and work procedures; Follow all safety rules that pertain to the duties performed and support all aspects of the District's safety and risk management program; Keep work area clean, orderly, and free of hazards; Immediately report all unsafe conditions and incidents.
• Maintain a supportive working environment and demonstrate a desire to exceed the expectations of internal and external customers.
• Perform other duties as required.
Requirements:
• 1-3 years of related experience cooking in restaurant or banquet operations with less than 2 years of experience as a leadworker or foreperson; or equivalent combination of education, training, and experience.
• Possession of a Certified Food Protection Manager certification issued by the State of Illinois or able to achieve within 30 days of hire.
• Must have and maintain CPR, AED, and First Aid certification or obtain upon hire (training provided).
• Knowledge of food preparation and presentation methods and quality standards.
• Familiar with the maintenance and care of culinary facilities, equipment, supplies, and materials.
• Knowledge of restaurant sanitation standards and food safety procedures.
• Experience with various cooking methods, knife skills, and food preparation techniques.
Hours: 40 hours or more per week. Days and time differ from week to week pending business flow. Likely to include weekends and holidays.
Starting Salary: $22.08 - $24.84 an hour
