Coco’s is the restaurant within the members-only club Colette, the newest addition to the portfolio of Santa Cruz Co., an international hospitality company founded in 2004 by restaurateur and designer Juan Santa Cruz.


We are currently seeking highly skilled and passionate Line Cooks to join our dynamic team. As a member of our kitchen, you will have the unique opportunity to work alongside our Michelin star Chef Philippe Orrico. With a commitment to excellence and a focus on French fine dining, you will be learning from his expertise and contributing to the creation of exquisite culinary masterpieces.


Coco’s is located on the thirty- seventh floor of the General Motors Building in Midtown Manhattan. Coco's is currently open Monday-Friday and closed on weekends.


Job Responsibilities:


  • Sets up Sushi station in time for service according to restaurant guidelines.
  • Prepares all Sushi orders as directed in a sanitary and timely manner.
  • Assist with receiving and storing deliveries of stock.
  • Ability to perform a variety of fish fabrication techniques
  • Ensure timely preparation of all food items for service.
  • Maintain cleanliness and organization of their section throughout service and preparation.
  • Skillful in executing recipes at their assigned section.
  • Effective communication with team members and supervisors.
  • Prepare and serve all types of sushi including nigiri, specialty rolls and sashimi


General Requirements and Experience:


  • A minimum of 2 years of experience as a sushi line cook with raw food preparation skills
  • Knowledge of various Japanese ingredients and preparations
  • Deep knowledge of fish butchery and great knife skills
  • Attention to detail, and understand of the importance of quality over quantity
  • Ability to work a variable flexible schedule
  • Must know and uphold DOH standards
  • Must be able to stand for extended periods of time. 
  • Must be able to handle items that weigh up to 50 lbs.


Compensation Details

Compensation: Hourly ($30.00)
