We are high-end, 18-seat cocktail bar and restaurant, opened since September 2022, located in front of the One-Star Michelin omakase restaurant Noda. We are looking for a sous chef who can prepare and execute service at a high standard as well as leading a team of cooks. Ideal candidates should also be comfortable with serving customers as you will be preparing hand rolls in front of guests.
The Ideal Candidate Must Be Able To:
- Follow recipes and team processes to ensure meeting time and quality standards.
- Manage a team of 2 cooks as well as (porters) to produce a 7-10 item dinner menu.as well as ensure that daily family meal is executed.
- Ensure food safety standards are always maintained, including proper storage of all kitchen items, use of PPE, and the maintaining of proper pH of rice, among others.
- Follow all cleaning procedures and ensure best hygiene and personal grooming practices
- Collaborate effectively and respectfully with all team members.
- Effectively communicate with management and immediately report any equipment, food quality, and service issues.
- Conduct daily line checks to ensure highest quality of daily productions.
- Train all line chefs and cook to prep all items, work service and make hadnrolls for guests
- Ensure that sanitation standards as set forth by NYC DOH regulations are compliant.
- Familiarity with ordering
- Butchering experience and familiarity with Japanese Cuisine
- Available to work weekends, nights, and holidays as the business dictates.
- 5+ years in previous upscale, Michelin Level experience and 2+years in a management role.
- NYC Food Protection Course Certification
