Position Overview: The Chef De Cuisine at Beach Plum Farm is a key leadership role responsible for overseeing the entire spectrum of menu creation, costing, and flawless execution of all food and beverage operations. This pivotal position demands a seasoned culinary professional with a passion for excellence and a proven track record in the culinary arts.


Essential Duties and Responsibilities:

  • Accurate Execution: Ensure precise execution of all Beach Plum Farm functions and events, maintaining the highest standards of culinary excellence.
  • Collaboration and Communication: Actively participate in departmental meetings and pre-shift huddles, fostering open communication and a collaborative work environment.
  • Recipe Database & labor Management: Uphold an accurate and comprehensive recipe database, ensuring consistency and quality in every dish prepared. Creating schedules and monitoring labor daily that reflect the goals of the farm and budget. 
  • Inventory Management: Conduct monthly inventories, demonstrating meticulous attention to detail in tracking and managing food and beverage supplies.
  • Food Rotation and Seasonal Menus: Implement proper rotation of food and food products to maintain freshness. Craft seasonal menus for breakfast, lunch, and dinner, showcasing creativity and a deep understanding of seasonal ingredients.
  • Special Menu Planning: Develop and execute special menus with precision and creativity, catering to diverse culinary preferences and dietary requirements.
  • Agricultural Coordination: Coordinate and direct the agriculture team in planning planting schedules and requirements, fostering a seamless connection between farm and kitchen.
  • Costing and Financial Acumen: Ensure accurate and timely costing of all special event menus, demonstrating financial acumen in menu planning.
  • Flexibility and Composure: Work a flexible schedule and maintain composure and control in stressful situations, meeting multiple and competing deadlines with grace.
  • Team Collaboration: Demonstrate cooperative and supportive behavior with colleagues and supervisors, contributing to a positive team culture.
  • Culinary Versatility: Exhibit proficiency in cooking within a structured kitchen environment and adaptability to "live-fire" cooking scenarios.
  • Additional Responsibilities: Undertake any other duties as assigned by the General Manager, contributing to the overall success and smooth operation of Beach Plum Farm.


Minimum Qualifications:

  • Proven experience as a Chef De Cuisine or in a similar leadership role.
  • Culinary degree or equivalent certification.
  • Strong organizational, leadership, and communication skills.
  • Ability to thrive in a fast-paced, dynamic environment.
  • Passion for culinary innovation and a commitment to delivering exceptional dining experiences.

Compensation: Salary ($75,000.00 - $85,000.00)
