Empowered Hospitality is looking for an Executive Chef for one of our fantastic hospitality clients in New York and Washington, D.C. We are open to relocation candidates!
The Opportunity:
Our client is seeking an experienced and passionate Executive Chef. The Chef is responsible for managing the kitchen personnel, ensuring the quality preparation of all food items and all proper handling/storage of all food items in accordance with applicable standards. The Executive Chef also coordinates the purchase of all food, menu development while maintaining food and labor costs.
Key Responsibilities:
Food and Labor Costing
- Monitor food costs by maintaining proper purchasing and sales record
- Responsible for ordering dry goods, produce, meat, and seafood on a daily basis.
- Review all waste logs prior to end of shift
- Cut BOH line staff according to business demands
- Reconcile payroll daily for cooks and stewards
Menu Development
- Responsible for scheduling and leading testing and tastings for new menu items
- Standardize recipes for each item
- Communicate changes and developments with managers and stay aware of reservations
- Train and implement all staff on updated MEP, menu descriptions, and line up
Staff Development and Training
- Train and supervise cooks
Kitchen Management
- Maintain a safe, secure, and healthy facility environment by establishing, following, and enforcing Department of Health sanitation standards and procedures
- Comply with health and legal regulations; and report and manage facility issues
- Develop and implement an operating procedure for Hazard Analysis Critical Control Points (HACCPs), as well as maintain a weekly HAACP log
- Implement an operating procedure for communicating maintenance issues with the engineering department
Requirements:
- 3+ years’ experience as a Chef de Cuisine or Executive Chef in upscale restaurants
- Bachelor’s degree in Hospitality, Culinary Management or similar preferred
- Food Handlers and ServSafe certifications
- Demonstrated ability to lead inspire team members to meet and exceed standards
- Proven project management, problem-solving, critical thinking and decision-making skills
- Ability to perform essential job functions under pressure whilst maintaining professionalism at all time
- Ability to perform in a fast-paced, dynamic work environment
- Ability to work evenings, weekends and holidays, including a variable schedule per the needs of the business
- Ability to lift 30+ lbs and walk, stand and/or bend continuously and for extended periods to perform essential job functions.
- Proficiency in utilizing programs including Gmail, Microsoft Office Suite (Word, Excel, Outlook & PowerPoint), timekeeping and payroll software.
