Little Donkey is a global tapas restaurant by James Beard Award-Winning Chef Ken Oringer and his team in the heart of Central Square in Cambridge. Heavily influenced by global cuisine and local market fare, Little Donkey's ever-changing menu provides guests the opportunity to sample food from all over the world. The seasonal menu is complimented by an extensive beverage program of wine, cocktails, cider, sake, and a rotating beer selection. 

Chef-owner Ken Oringer created this restaurant to find the freedom to cook whatever he wanted whenever he wanted to cook it. Think of it as what chefs would cook for other chefs as a “family meal.” Service is casual and friendly, with a true neighborhood feel.

Scope & General Purpose: As Bar Lead, this position takes a pivotal role in maintaining and improving cocktail and beverage programs, guest service at the bar, and cocktail menu development. In collaboration with Jodie Battles, Beverage Director/Managing Partner, you will oversee cocktail menu development, staff education, NA beverage, liquor, and beer ordering, inventory, and care for the Bar space and equipment, coordinating a collaboration between managers and the Bar team.

Schedule: Full-Time, varying schedule, across Little Donkey’s business hours

Management Structure: Reports to the Assistant General Manager, General Manager and Managing Partners

Bartending Responsibilities:

  • Ensure the quality of the beverage program offered by the restaurant is of the highest standard, reflective of the restaurant’s identity and restaurant execution needs
  • Set an example of professionalism, always striving to build valuable guest relationships 
  • Display commitment to volume-oriented service with precise execution during all Bar shifts
  • Participate in and help with public events, private events, and key marketing opportunities related to the Bar program
  • Assist in keeping the restaurant compliant with all applicable health codes and regulations

Bar Lead Responsibilities:

  • Develop initiatives to continually create repeat Bar guests, as well as recover guest experiences
  • Present seasonal and regular menu changes, with thought given to creativity, cost, and execution
  • Coordinate a collaboration between the Beverage Director and the Bar team with menu development in a meaningful, professional, growth-oriented manner
  • Assist in training Bar Staff
  • Determine Bar preparation needs based on level of business, changes in menu, or special events
  • Receive Bar products and supplies, ensuring inventory is accurate and stored in an organized manner
  • Be the voice of the Bar in Daily Briefing and provide information on Bar products, technique, N/A beverage, cocktail and beer menus, and overall beverage education
  • Support Managers/Beverage Director with all Beverage orders, inventory, and relationships with vendors
  • Complete weekly ordering in a timely and fiscally responsible manner
  • Provide continuing education and development for both the Bar Team and front-of-house staff
  • Assist in training new Bar staff in steps of service, cocktail preparation techniques, and Little Donkey food and beverage knowledge
  • Help oversee maintenance of the Bar space, beverage storage areas, and prep space, to include beverage product, fruit, ice, glassware, and overall organization and cleanliness behind the Bar, reporting any issues to the Service Manager, AGM, or General Manager
  • Other duties as assigned

  • Job Requirements:

    • Minimum 3 years’ experience working in hospitality, preferably behind the Bar
    • Strong working knowledge of bartending, food, and beverage
    • Ability to work well under pressure in a fast-paced, ever-changing work environment 
    • Excellent verbal and written communication skills 
    • Highly organized, with strong attention to detail 
    • High integrity and professionalism 
    • A genuinely positive, joyful, upbeat, and energetic attitude – leading by example

    • Demonstrates diligence and technique in cleanliness, service, and precision
    • Displays a curious, kind, thoughtful, creative, and self-aware personality
    • Works the Bar during service, with excellent guest-facing hospitality and service recovery skills
    • Offer support, guidance, training, and education to bar staff, and have extensive menu and product knowledge
    • Thrives in a chef-driven restaurant atmosphere, supporting the near-obsessive food culture
