The Dinex Group, the restaurant group of internationally acclaimed Chef Daniel Boulud, is seeking a General Manager for the One Vanderbilt location of Epicerie Boulud.
The General Manager is a full-time position that is responsible for the overall quality and profitability of 2 entities: Epicerie Boulud and La Terrace by DB. Épicerie Boulud is Chef Daniel Boulud's eat-in and take-out market and café. La Terrace is an F&B concierge amenity, offered exclusively to the tenants of the building.
The manager ensures that all personnel and systems function efficiently so that guests are satisfied, the business achieves budgeted profit levels, and employee morale is maintained.
We are looking for individuals who possess a general understanding of retail and/or restaurant business operations, and an ability to train and inspire staff, commitment to quality, and the ability to lead and motivate a team effectively. He/she will have an exceptional knowledge of food & beverage, creativity and flair; knowledge of business financials, and an ability to recruit, train and inspire a large staff.
Prior experience in a gourmet food market, retail food operation or Café is required.
General Manager Responsibilities
- Complete oversight and responsibility of P&L and budgets – analysis, action plans and adjustments to ensure store meets budget every month in all categories
- Oversight of all sales projections and forecasts
- Projections and forecast validated before schedules are written
- All scheduled written to budget vs. projections and expectations
- Make or validate all the staff schedules each week
- Submit Payroll in adherence to all Dinex policies and expectations
- Attend Epicerie Manager Meetings, and all necessary meetings
- Schedule and hold team meetings on an ongoing basis – put these meetings on calendar and add Dan Boyce and other parties as needed
- Oversight and responsibility for all accountability and Dinex standards in your store – write/validate all write-ups
- Responsible to coach and develop all employees with daily, weekly, and longer term goals
- Create a positive work environment that employees can grow and succeed in
- Write all evaluations
- Termination process – communicate with HR and comply with all State regulations and expectations for proper terminations
- Approve overtime, vacations and sick days
- Equipment ordering
- Conduct walk-throughs of the store upon arrival and throughout the day
- Oversight and responsibility for all ordering and systems
- All orders to have order sheets with Pars (or trend instructions to obtain the par)
- Train and check supervisor’s orders when needed
- Update Corporate on permits and licensing
- Help to coordinate special events when needed
- Delegating responsibilities when something needs to be cleaned, fixed, or restocked
- Full DOH compliance responsibilities – including fixing all necessary changes found during walk-throughs and inspections
- Oversight and responsibility of the following:
- Inventory
- Hiring & Onboarding
- Daily cleaning checklists and deep cleaning schedules
- Repairs, preventative maintenance schedules and all other upkeep
- All and any accounting procedures (invoices, cash, credit card slips, petty cash/PEX)
- Fill in and take over duties for everyone AGM level and below when needed
Events:
- Ensuring all event information is up to date and fully detailed prior to event for all involved parties
- Review event floorplans, pack lists and rental equipment to ensure success
- Communicate standards and expectations to all event staff
- Oversee the execution of events
- Maintain calendar of events through Tripleseat and attend all necessary event meetings and conference calls.
- Managing employees and temp employees holding them accountable for their work and disciplining as needed.
