Job Details

The Head Sommelier position at Bar Boulud and Boulud Sood is a pooled-tip service role that works closely with the management team and all other front-of-house and back-of-house team members.  The Head Sommelier is responsible for maintaining a wine list that meets the goals set by management and for ensuring that proper service of wine and beer is maintained according to the wine service manual.  This staff member conducts training of wait staff and keeps them up to date of all changes to the wine list.  The sommelier orders alcoholic deliveries as needed, maintains the beverage storeroom, and verifies all alcoholic beverage delivery invoices.  The Head sommelier supervises the sommellerie team.


Essential Duties:

Wine List

  • Creates and maintains a beverage list that meets the goals set by management (wine and aperitifs)
  • Maintains beverage menu for the bar
  • Maximize profit by maintaining profit margins, sales mix
  • Meets goal for inventory levels in both dollars and number of bottles
  • Keeps list up to date with wine trends
  • Conduct a regular cost and sales -breakdown

Staff Training

  • Trains staff to maximizes revenue through increase sales/spending
  • Conducts weekly training to ensure the staff knows pronunciations, origin, and grape variety of each wine on the list
  • Train staff on wine knowledge and wine and food pairing
  • Ensures staff is up to date on all additions and deletions from the list
  • Communicate dining room staff and bar staff

Purchasing and Inventory

  • Maintain organized and clean beverage storeroom
  • Ensure that all alcoholic beverage deliveries are checked in
  • Verify all alcoholic beverage invoices
  • Ensure all alcoholic beverage are put in proper bins promptly
  • Process all invoices in a timely manner, following up on any billing disputes
  • Order all alcoholic beverages, except beer
  • Conduct a regular inventory of all alcoholic beverages, except beer
  • Ensure that all security controls are adhered to
  • Sets proper controls and ensures they are adhered to
  • Make changes to wines in POS system as necessary
  • Maintain POS perpetual inventory

Service

  • Work dinner service on a regular basis
  • Interact with guests and serve customers as required and make recommendations
  • Assist wait staff with wine service when appropriate
  • Ensure that bar staff serves beverages properly
  • Monitors wine service and trains according to service manual

Supervisory role

  • Supervision of the Sommellerie team and
  • Direct the entire staff on all matters related to wine and beverage

Competencies & Qualifications:
  • Previous experience in a fine dining environment, preferably in a similarl role (5 years)
  • Outstanding knowledge of wines
  • Extensive knowledge of and interest in French cuisine
  • Actively practice food safety procedures
  • Organizational skills
  • Effective time management
  • Pleasant demeanor
  • Positive and clear written and oral communication skills
  • Ability to work well in a team environment
  • Ability to engage guests successfully and build a relationship
  • Impeccable grooming as defined by management and dress code

Compensation Details

Compensation: Hourly ($16.00 - $17.00) plus tips

Boulud Sud is Chef Daniel Boulud’s vibrant Mediterranean-inspired restaurant featuring flavors that travel the entire Mediterranean region from the shores of Southern France to the coast of North Africa and beyond. There is an emphasis on grilled fish and lamb as well as an abundance of fresh vegetables on menu sections entitled “De La Mer”, “Du Jardin” and “De La Ferme”. The Mid-Century Modern interiors, including a spacious bar and lounge, are decorated in tones of sunflower yellow and slate grey. The light filled space is framed by floor to ceiling windows, vaulted ceilings, pear wood paneling and terrazzo floors, as well as works by famed artist Vik Muniz. The restaurant, with an entrance on West 64th Street, is just steps from Manhattan’s Lincoln Center and is adjacent to Bar Boulud and Épicerie Boulud.
