Job Details

Fiola Mare is seeking an experienced beverage manager to lead our cocktail program.  This role is a salaried manager position with responsibilities for leading the bar team, developing the cocktail and beverage program and representing the beverage program on the floor of the restaurant. 

Fiola Mare is our stylish, coastal Italian restaurant inspired by Fabio Trabocchi’s love for seafood. Our menu features wonderful crudo, seafood towers, and daily selections of whole fish and the most pristine seafood from around the world. Offering scenic views from the Georgetown waterfront, Fiola Mare also offers beautifully crafted cocktails and a superb cellar recognized by Wine Spectator with a Best Award of Excellence.

Essential Duties & Responsibilities:

  • Conducts daily bar and restaurant duties
  • Ensures all Opening & Closing Duties have been completed by bar-team.  
  • Conducts pre-shift briefings and covers relevant information pertaining to restaurant guests, foods & beverages, and restaurant operations. 
  • Places orders for product within budget.
  • Conducts inventory as scheduled.
  • Processes invoices in a timely manner.
  • Performs guest service to the highest standard. 
  • Monitors guest service and quality control standards during service.  
  • Ensures correct cash-handling procedures are met and maintained. 
  • Conducts all required Opening, Side-Work, Hand-Over and Closing Duties as outlined by Fabio Trabocchi
  • Monitors and ensures all bar-team Opening, Side-Work, Guest Service, and Closing Duties are consistently and correctly followed and continuously update. 
  • Schedules labor as required by forecasted business activity ensuring appropriate coverage. 
  • Monitors and enforces proper uniform and grooming standards among team members. 
  • Conducts informative pre-shift briefings with bar-team members. 
  • Processes liquor and other bar supplies orders as needed. 
  • Ensures identification-inspection procedures are consistently maintained. 
  • Ensures the management team is trained on proper bar procedures and bar standards based on Fabio Trabocchi Restaurant standards. 
  • Responsible for updating all beverage menus
  • Actively participates in all company training programs and consistently meets training expectations. 
  • Maintains an understanding of the proper steps of service required of all FOH positions. 
  • Maintains mastery-level knowledge of all beverage menu-items, ingredients and preparation processes.

Qualifications:

  • Minimum of 3 years of experience leading a beverage program in an upscale casual or fine dining restaurant, experience with high volume is a plus
  • Experience with staff training
  • History of leading a successful and profitable bar program
  • Must be able to work in a standing position for long periods of time
  • Previous experience with Italian or Spanish restaurants a plus
