Chef Christopher Kostow of The Restaurant at Meadowood, The Charter Oak & Loveski Deli has partnered with the Altamura family to reimagine Ciccio restaurant.
Responsibilities
- Report directly to Ciccio Chef & Chef Christopher Kostow
- Properly monitor all cooks’ working hours, ensuring all staff is punctual and working scheduled hours
- Maintain a clean and orderly cooking station and adhere to health and safety standards
- Monitoring and managing of equipment and devices used for cooking
- Manage & order inventory of cooking ingredients and make appropriate orders within budget
- Oversee quality control for ingredients, finished products, and facilities
- Ensure that al food items are prepared as per standard recipes whilst maintaining portion control and minimizing waste.
Requirements
- Proven experience as a Sous Chef, or relevant role
- Ability to impact knowledge into junior kitchen staff if such need arises
- Understanding of restaurant business and budgets
- Effective organization, communication, and leadership skills
- In depth knowledge of sanitation principles, food preparation and cooking techniques/nutrition
- Strong attention to detail and ability to comfortably lead a team in a busy atmosphere
- DOH food protection certified
- Certificate in culinary arts, or relevant field
- Experience in schedule creation to ensure kitchen receive adequate manning
