Job Details
The job of Sous Chef at Le Bonne Vache is to set a good example. It’s to grow our food program, our systems, and our relationships. The job includes day-to-day cooking, cleaning, expediting service and opening and/or closing the restaurant 5 days a week. It involves new dishes, new projects and developing partnerships with other organizations. It is about looking at what we do and figuring out if there’s a better way, then figuring out how to carefully get us there.

Goal is to control the flow of the entire kitchen upon arrival. Consistency and timeliness during service have to be of the utmost importance. Knowing what is happening with the rest of the restaurant is also a necessity, including supporting our team of porters, prep cooks, and line cooks. The cleanliness and organization of both kitchen spaces is maintained through the sous chef and chef. Communication is an important part of this time of day as the sous chef will send the communication log, be checking over the prep lists and order guides, and going over any important items with the FOH management team.

The sous chef will oversee spotless closes and checking in with the dishwashers before leaving. The sous chef will be alone in the kitchen with a number of cooks and porters and must be able to keep a consistent tone while maintaining productivity.

Requirements
Minimum of 3-4+ years of experience working in a similar volume-based business that represents global culture and consistent, approachable and elevated dishes. Ideal candidate is a motivated chef de partie/line cook or junior sous chef looking to further their craft and skill set. 
Culinary trained and professional who is passionate and curious to develop and grow as a Chef
Experience in managing P&Ls, labor, purchasing, vendors and quality control while providing results in revenue
Must possess consistent and stable work experience & encompass the desire to operationally support the businessas an individual contributor and leader
Must encompass food Serve Safe certification and have experienced with local sanitation regulations
Well-versed and timely email etiquette as well as written and verbal communication
Experienced in training and leading team as well as production of large quantity food; preparation and excellent knowledge of quality food operations
High school diploma or equivalent trade school
