Major Food Group seeks a talented Sushi Cook for The Lobster Club!
MFG is hiring a passionate, experienced Sushi Cook to help execute an authentic Japanese culinary experience!
The Lobster Club is a Japanese Brasserie by Major Food Group. It was designed by Peter Marino in collaboration with Major Food Group to celebrate a unique interpretation of Japanese cuisine. Classic techniques like tempura, gyoza, yakitori and robata are on display, along with a focus on Teppanyaki and Sushi. The Lobster Club sources fish directly from Tokyo's Tsukiji market in order to ensure the highest level of quality.
RESPONSIBILITIES:
- Prepare all food products according to the prescribed methods, both during service and prior preparation
- Follow all internal and state regulations such as DOH/Food & safety/HACCP/Beverage
- Complete mise en place list in the time allotted, making sure all sections of sushi are ready for each service
- Acquire recipe knowledge and section setup to smoothly execute service
- Ensure all items on station are properly stored, labeled and dated
- Responsible for setting up own station and help others if needed
- Responsible for time management, efficiency and station organization
REQUIREMENTS:
- Minimum 2-3 years as a Sushi Cook, preferably in upscale, high volume restaurants
- Culinary certificate strongly preferred
- Knowledge of sushi, sashimi, and traditional Japanese flavor profiles a must
- Positive, enthusiastic attitude and a drive to do your best every day a must

Compensation: Hourly ($23.00 - $26.00)
