We're looking for an enthusiastic, motivated, hard-working prep cook to join our incredible prep team, with a particular focus on meat and fish butchery. 

What you’ll do: 

• Break down whole fish, clean and portion meat, and care for all the restaurant's proteins from receiving all the way to service. 
• Learn correct fabrication and portioning procedures and take ownership over the care of these products.
• Keep our prep area and walkin clean and up to DOH standards. 
• Participate in vegetable and sauce prep as needed. 
• Collaborate with other chefs and managers on quality and production issues. We are always interested in learning from your experiences and teaching you our best practices. 
• Develop in-depth knowledge of our menu and the culinary traditions that inspire us.
• Participate in ongoing training, education and tasting.
