The Ramova Theatre, Taproom and Grill  is a multi use space within a restored historic movie theater encompassing an 1500+ capacity live performance venue, an independent brewery, a 200+ capacity live performance and event space, beer garden, grill, and taproom.


Ramova is more than live music, food, and beer.  Our team, and by extension this role, will be charged with building a company culture that will create experiences with and for the community at large.  Ramova exists to support the southside of Chicago, the greater Chicago area and national music scene, and anyone from near or far who appreciates good music, beer, food, and drinks.


We are now hiring all Back-of-House Culinary positions: Line Cooks and Prep Cooks! 

POSITION SUMMARY

All prep cooks will be responsible for high-quality preparation, cooking, and/or production of dishes according to menu and recipe specifications, following instructions relating to the timely preparation of food orders, organizing workstations, and assisting other cooks as needed. 

ESSENTIAL JOB RESPONSIBILITIES

  • Complete all prep for the next day's production per production sheets and recipes as assigned and as needed.
  • Prepare food items as needed for upcoming menu offerings.
  • Maintain work area in a safe and sanitary condition, which may include washing dishes, cleaning cooking equipment, and other areas of the kitchen.
  • Ensure ingredients and final products are fresh.
  • Follow recipes, including measuring, weighing, and mixing ingredients.
  • Maintain department cleanliness and organization, adhere to safe work and equipment practices, and follow all food safety, health, and sanitation standards.
  • Assist with the cleaning, sanitation, and organization of the kitchen, walk-in coolers, and all storage areas.
  • Ensure all the products and prepared items are properly labeled, dated, initialized, covered, and rotated following FIFO (first in, first out).
  • Properly store and/or discard leftover food.
  • Follow departmental checklists and standard operating procedures to ensure work areas are prepared for opening, mid-shift, or closing in accordance with company guidelines.
  • Follow all company policies, procedures, and guidelines including being ready to work at scheduled shifts, in uniform, as per uniform standards.
  • Maintain professional relationships and clear communications with all Managers and Team Members.
  • Communicate any food delays or issues to management.
  • Ability to multi-task calmly and effectively in a busy, stressful environment.
  • Perform and complete any other duties and responsibilities given as required in a timely and professional manner.

KNOWLEDGE, EXPERIENCE AND SKILLS

  • Culinary degree and/or certificate highly desirable.
  • Minimum of two (2) year of restaurant experience
  • Must have excellent knife skills and are proficient in all aspects of cooking.
  • Demonstrated experience with various cooking methods, ingredients, equipment and procedures.
  • Working knowledge and understanding of health, safety, and sanitation standards
  • Ability to take direction.
  • Ability to follow and execute recipes to designated specifications.
  • Ability to work in a clean, organized, and efficient manner in a high-pressure environment.
  • Excellent attention to detail, time management, and organizational skills.
  • Effective communication and interpersonal skills are conducive to a productive teamwork environment.
  • Ability to work both independently and in a team environment. 
  • Operate ethically to protect the assets and image of the company.
  • Strong work ethic, team player, and customer-focused approach.
  • Ability to work a flexible schedule including days, nights, weekends, and holidays.
  • Must be passionate, entrepreneurial, and dedicated to success.

PHYSICAL REQUIREMENTS

  • Ability to perform essential job functions consistently, safely, and successfully with the ADA, FMLA, and other federal, state, and local standards, including meeting qualitative and/or quantitative productivity standards.
  • Ability to maintain regular, punctual attendance consistent with the ADA, FMLA, and other federal, state, and local standards.
  • Must be able to lift and carry up to 50 lbs.
  • Ability to stand for prolonged periods of time.
  • Moving about on foot to accomplish tasks, particularly frequent movements from place to place within the property. 
  • Bend, lift, carry, reach/extend arms, and hands above shoulder height frequently, or otherwise move in a constantly changing environment.
  • Climbing steps regularly.
