The Dixboro Project, a multi-concept dining establishment in the heart of charming Dixboro Village, is seeking a highly experienced, creative and supremely organized Executive Chef to lead an award-winning culinary team and concept.
The Dixboro Project was developed by the influential Ann Arbor restaurant group, The Pulpo Group. This regionally transformational project is the group’s third restaurant in a storied legacy begun in the late 1880’s.
PROPERTY AND PROGRAMMING
- Located in a historic barn which was home to 100 years of restaurant history
- Culinary goals are to honor the heritage and history of country hospitality in the Midwest, and specifically, our property’s nearly 100 years of continuous operation as a popular destination restaurant; ‘luxurious in flavor, while humble in style’
- Local agricultural partnerships are already in progress, giving our culinary team direct access to some of the area and state’s best products (including heritage beef, produce, prepared foods)
- State-of-the-art kitchen includes wood burning pizza oven, a side door bakery & pick up counter, separate dedicated prep and pastry kitchen. The best cooks and chefs in the area
- Restaurant property includes seven developed and wooded acres, the majority of which is highly biodiverse watershed bordering Fleming Creek, a tributary of the Huron River
- Internal farm program featuring on an off site growing
- On property guest house
- Sommelier-designed wine program highlighting American wineries
REQUIREMENTS
- 5+ years as Exec Chef, Head Chef or Chef de Cuisine in a professional, full-service kitchen
- Exceptional multitasker - able to run multiple projects and initiatives at once with great attention to detail and follow-through
- Experience in high volume production
- Strong developer of people and building the capacity of a team
- Excellent culinary skills and techniques, experience with high-volume, breakfast/lunch/dinner
- Positive mentality, integrity, bias towards excellence
- Proven working experience leading a team
- Highly organized with strong administrative skills (scheduling, ordering, inventory, cost management)
- Sense of urgency and thrives in a fast-paced environment
- Strong written and verbal communication skills
- Excellent training and leadership skills
- Experience with hiring/interviewing and building a winning team
- Experience hitting targeted sales and cost goals
