Who we are:Ruffian, an Eastern European natural wine bar, in the Lower East Side is looking for a gifted line cook.
The candidate we are looking for:As a Line Cook you will be part of a smaller team and should have a strong passion for cooking food,
technique, and an eagerness to learn. The Cook, works in collaboration with the Executive Chef, will
work closely with the culinary team to drive service each day and inspire team members to work
together and hold one another accountable. The Line Cook will maintain compliance with DOH
standards, cleanliness, efficiency and overall excellence, opening or closing duties and receiving. The
Line Cook will employ their culinary skills in order to play a critical role in maintaining guests
satisfaction. The ideal candidate is friendly, motivated, and devoted to becoming an integral member
of a team that values hard work and attention to detail.
The role:➢ Display a working knowledge of all ingredients and preparation used on the menu
➢ Consistently ensure that station mise en place is prepped, seasoned and stocked
throughout service and the overall station remains clean and organized
➢ Effectively participates in a professionally run service period, ensuring excellence
in cooking, timing, plate assembly and communication
➢ Promote teamwork and excellence amongst the kitchen team
➢ Demonstrate an eagerness to refine techniques and a desire to continually learn
and grow
➢ Preps station and replenishes with all of its components having a par stock
➢ Organize and consolidate prep, making notice of needs and colleagues and chef
➢ Assist in putting away of all orders properly
➢ Utilizing prep and food, for service
➢ Cleaning of station, kitchen, and all of its associated parts as directed by Chef
➢ Sanitation of station and kitchen to be held to NYSDOH standards
➢ Assist dishwashers in organizing and cleaning of kitchen as needed
➢ Has a positive work ethic and professional approach with coworkers and guest
Qualifications and Experience:➢ Kitchen experience required
➢ Culinary education preferred
➢ Knowledge of a second language is a plus
➢ Positive attitude and excellent communication skills
➢ Strong attention to detail
➢ Must be able to stand for long periods of time
➢ Must be able to work varied shifts which include weekdays, evenings, weekends
and holidays
➢ Team player
➢ Energetic and professional
➢ Familiar with industry’s best practices
➢ Baking experience is a plus
Compensation and Benefits:➢ We are offering a weekly schedule of 4 shifts (about 32-24 hours). Four shifts are
dinner services working the line (from 2pm-11 or 3pm-12). The starting salary is $24- $25/hour with plenty of room to
grow.
➢ Application process has an interview and two 5-hour trials (paid $24/hour).
➢ Also included: health insurance, PTO, commuter benefits and dining discounts. We
pay half the cost of a basic insurance plan for all full-time BOH employees. We are a

➢ Regularly required to sit, stand , walk, bend, lift, use hands and fingers, reach with
hands and arms, talk and /or hear
➢ Employees must be able to lift a minimum of 40 lbs multiple times per day, and
push a cart weighing up to 75lbs
➢ Expect to be on their feet for up to 6 hours at at time
