In 2018, head chef Nozomu Abe established the main store in New York so that customers can enjoy authentic Edomae sushi. This is a reservation-only Edomae sushi omakase-style Japanese restaurant. We have also acquired a Michelin star, and are now urgently recruiting sushi chefs for business expansion (NY branch and LA). It is suitable for those who have a strong desire to spread Japanese food culture overseas. Since we are a small company, we welcome people who can work well with other employees, who can cooperate with each other, and who can offer heartfelt hospitality to our guests.

We are seeking candidates with 5 + years' of experience as a sushi chef with knolwedge of, techniques, tableware used, and appreciation of the history and culture of Japanese cuisine. 
We look for those who are flexible, who are always upward-oriented and who enjoy learning.

Job Description (仕事内容):
In addition to preparation, you will also learn important principles for working, including the corporate culture of the company.
During the business, you will learn many things to help the business run smoothly, such as assisting the head chef Nozomu Abe and being in charge of the grill behind the scenes.
You will gradually be entrusted with tasks with many responsibilities.

営業中にあたってはヘッドシェフNozomu Abeのアシスト業や、裏での焼き場担当など、営業がスムーズにいくように多くのものを学んでいただきます。

Chef Nozomu Abe's vision to create a superlative dining experience – memorable, intimate, elegant, and a feast for the senses – was inspired by childhood memories of extraordinary fish from his grandfather's seafood company in Hokkaido.

Thus, Sushi Noz was born. Conceived like an ancient Kyoto temple, it seeks to transport you to another world, where refinements of time and space are transformative and every moment can be treasured.

The décor emulates the Sukiya-style of architecture with its delicate artistry, multiple varieties of cedar, and not a single nail used in the traditional woodwork joinery. A traditional hinoki ice-chest refrigerator complements the centerpiece of the dining room: a 200-year-old hinoki wood sushi bar. Every subtle aesthetic feature is designed to evoke harmony and a sense of well-being.

Our Edomae style tasting menu begins with 5-6 otsumami, small plates that highlight seasonal fish and vegetables. The menu then progresses through 12-14 courses of seasonal nigiri, followed by miso soup, tamago, and dessert.
