Major Food Group is hiring an experienced Sous Chef to join the Restaurant Development team!

The Development Sous Chef is a crucial member of the development team at Major Food Group, which is a crucial part of the organization at large. This role is designed for a self-starter that is capable of working across constituencies on high level projects, while also being able to get into the nitty gritty of jobs and tasks to ensure projects are executed correctly.
RESPONSIBILITIES:
- Preparing station for Director of Culinary Development for scheduled tastings
- Assist in running the day to day kitchen operations
- Checks & monitors food preparation, cost, quality, quantity and portion control on a daily basis
- Ensures hygiene standards are kept to the highest standards at all times
- Works closely with porter team to maintain the cleanliness of the kitchen area as well as the equipment and utensils
- Ensures safe and proper use of equipment at all times and instruct proper procedures to all culinary colleagues
- Maintains & manages daily par stock levels for all items as agreed and ensure breakage and wastage are kept to an absolute minimum
- Reports any problems, failures of machines or small equipment etc. as soon as possible
- Inspects all refrigerated areas and ensures regular turnover of food items
- Ability to physically handle knives, pots, mirrors, or other display items as well as grasp, lift and carry same from shelves and otherwise transport up to 50 pounds to every area of the kitchen
REQUIREMENTS:
- 4 years culinary experience required
- Fundamental understanding of kitchen operations and flow of service, breakdown of position and roles, and standard tools and materials
- Strong knives skills required
- Flexibility is a must
- Self starter, must be able to work under little direction
- Communication skills- written, verbal, and presentational
- Experience working in a fast paced environment
