Lupetto is inspired by the tradition of wood fired cooking in Italy, with Chefs Michael Berardino (dell'anima, Rubirosa) and Matt Spivey (Maialino) leading the culinary program. Lupetto will feature a robust selection of wood-fired meats, extensive vegetable contorni, Neapolitan style pizza from the wood-fired pizza oven, and a selection of house-made pastas. Local grass fed beef will be specially sourced and dry aged for 50 days by Happy Valley Meat Company, while Heritage Foods USA will provide pasture raised heritage pork and poultry.
Additional menu highlights include wood-roasted oysters with strega hollandaise, Crespelle with white bolognese; Spaghetti al Limone with meyer lemon and bronte pistachio; and Veal Milanese with gem lettuce, radish, wood-fired tomatoes and saffron aioli.
The expansive beverage program will feature the premier wine producers from around the world and a lush craft amari cocktail lounge on the cellar level. The restaurant will have 175 seats set over two floors, and additional outdoor seating in the summer.

RESPONSIBILITIES:
- Assist guests with wine selection, considering budget and preference when making selections
- Increase average check and overall beverage sales through effective recommendations and sales techniques
- Explain how beverage offerings complement food menu offerings
- Ensure all wine and beverages are presented and served in line with company service standards
- Prepare and execute staff education regarding beverage offerings
- Maintain organization of cellar and all beverage storage areas
- Manage all beverage deliveries and invoices
- Keep the teams up to date with any changes to the list or wine program, including vintage changes, new offerings and unavailable items
- Conduct regular inventories
- Ensure company beverage cost goals are met by implementing cost control practices, inclusive of inventory controls and regular pricing audits
- Assist with additional managerial responsibilities as delegated by General Manager
- Keep beverage lists and restaurant teams up to date
REQUIREMENTS:
- Minimum of 2-4 years experience as Sommelier in upscale, high volume restaurant
- WSET certifications preferred or certifications from another accredited wine institution preferred
- Extensive knowledge of wine and wine service techniques
- Availability to work nights, weekends and holidays
- Ability to lift 30+ pounds
