Position Summary:
We are looking for a chef de cuisine who has a deep passion for food and hospitality. The ideal candidate should be able to demonstrate excellent food knowledge and experience as well as the ability to lead a small team. Experience with asian cuisine is desired, but not a dealbreaker. You will be expected to build and maintain a culture that reflects the core principles and value system of our company.
Qualifications and Primary Job Requirements:
- Minimum of 3 years professional hospitality leadership experience in a similar environment
- Excellent product identification knowledge in produce, meats, fish, herbs, grains and equipment.
- Understand, and have the ability to train, on all basic cooking methods: braising, poaching, roasting, steaming, sauté, grilling, blanching.
- Excellent knife skills, ability to cut all vegetables and fruits in all utilized cuts and have the ability to train and monitor others.
- Management certified according to state health department criteria
Responsibilities and Duties, include but are not limited to:
- Menu Development
- Hiring and Training
- Food quality and consistency while at the same time keeping Food and Labor Cost in line with or below budgeted levels.
- Ability to execute all positions on the line and support staff when they need additional coaching
- Complete understanding of restaurant safety and emergency procedures
- Ensure all food items are of top quality and menus are aligned with current trends and in-season
- Ensure A+ standards for kitchen cleanliness and follow all Health Department Guidelines to ensure proper food handling
