What we are looking for in a CDC.Previous fine dining experience in a Michelin Star property required.Involved in collaborative menu planning with Chef James Syhabout on the tasting menus to create consistent experience. Coordinates and schedules the work of all chefs, cooks and other culinary personnel. Continuous training and development of chefs and cooks.
Develops recipes and techniques for food preparation and presentation which help to assure consistently high quality and to minimize food cost. Constant collaborative R+D.
Creates menu descriptions for all FOH/BOH employees.Maintain positive relationship with FOH staff.
Manage and lead all sourcing, purchasing and maintain relations with vendors and farmers.Maintain and track a consistent monthly inventory
Responsible for hiring, scheduling and payroll for all kitchen employees. Ensures proper staffing for maximum productivity and high standards of quality
Ensures high standard of sanitation and cleanliness in line with all Federal/State health code requirements as well as HACCP compliance.Safeguards all food preparation employees by implementing training to increase their knowledge about safety, sanitation and accident prevention principles.
Must possess the right mindset to push for daily self-improvement. More importantly, knows how to have fun and inspire the team.
Compensation: Salary ($80,000.00 - $90,000.00) plus tips
