XUNTOS, “together” in Gallego, serves small plates of things we want you to try: from the farmer’s market to the traditional dishes of Galicia, Asturias, Catalunya & the Basque Country, as they’re eaten in Spain. The wines follow the food: natural, unrefined, generous, showcasing Spain & California, along with some others we love & want to share with you.
This is the 2nd restaurant from Chef Cordero, who opened GASOLINA in Woodland Hills in 2015. She is a James Beard Fellow & co-founder of Regarding Her, a national nonprofit supporting women in hospitality. Scott Baker, previously the Wine Director at SOMNI, is the General Manager.
XUNTOS is hiring a Maitre d’/Floor Manager. We’re looking for someone who is organized, detail-oriented, & disciplined in implementing and maintaining processes & systems, with enthusiastic energy. You must be comfortable working as a team in a collaborative manner.
As the Maitre d’/Floor Manager, your primary responsibility will be to bring structure, consistency and accountability to daily operations for our guests & staff alike, while ensuring guests have the best possible experience by welcoming them genuinely, introducing them to the restaurant, maintaining the pace of service & taking good care of our space.
Strong interest in natural wine & food is required for this role.
Your responsibilities:

Run the Front Door with grace, efficiency & kindness.
Thorough use of RESY/OpenTable, including confirming & mapping reservations, keeping a wait list and taking useful guest notes.
Office work, including organization & menu printing.
Be attentive to guest requests, dietary restrictions & allergies.
Proper table maintenance: including serving, clearing, marking, filling water & resetting tables.
Develop knowledge & deep understanding of our food menu: including advanced knowledge of ingredients, preparation, coursing & characteristics.
Develop knowledge & deep understanding of our drink menu: including advanced knowledge of wine grapes, regions, styles & producers.
Work to ensure continuous development in quality of guest experience, service, operational efficiency, employee retention & satisfaction.
Work collaboratively to achieve company objectives in sales, service, quality, appearance of facility, sanitation & cleanliness through training of employees and creating a positive, productive working environment.
Create weekly front-of-house schedules in accordance with XUNTOS’s business needs & labor goals, and publish them promptly. Enforce breaks where required, and ensure compliance with company meal & beverage policies. Ensure all front-of-house timesheets are accurate.
Manage and develop direct reports towards individual growth and quality standards of excellence.
Ensure consistent, thorough, and timely communication to subordinates, peers, managers, guests & vendors.
Work in support of the back-of-house to make sure all foods are consistently prepared and served according to the XUNTOS’s portioning, cooking & serving standards.
Work in support of the General Manager to ensure that all beverage service, training programs, inventories, & storage facilities are consistent with XUNTOS’s standards.
Control cash and other receipts by adhering to cash handling and reconciliation in accordance with the restaurant’s accounting policies & procedures.
Control linens & smallwares for uninterrupted service within budget targets.
Opening: leading pre-shift meetings, liaising with the kitchen to stay informed on menu changes & service notes, adjusting staffing according to business needs, ensuring service staff & dining room are prepared for service.
Closing: recording staff tips and hours, reconciling cash, writing shift notes, checking out service team & performing a final walk-through of the restaurant.
Assist the General Manager in hiring procedures, training, planning & directing work, and progressive coaching and counseling.
Fully document & formalize employee coaching, conversations, evaluations & discipline.
Ensure that all guests are receiving the highest level of service & hospitality.
Investigate & resolve service issues and guest complaints with a sense of urgency, poise, and good judgment.
Fill in where needed to ensure guest experience is never compromised as a result of operational challenges by providing direct service to guests as needed, including, but not limited to, order taking, wine service, and general duties.
Ensure the the reservation system (Resy/OpenTable) & POS system (Toast) are operating efficiently & effectively at all times.
Fully understand and comply with all federal, state, county & municipal regulations that pertain to health, safety and labor requirements of the restaurant, employees & guests.
Your Requirements:
Minimum three (3) years of experience working in a service establishment of similar caliber.
Two (2) years of restaurant management experience preferred.
Excellent verbal and written communication skills.
Must possess basic computer skills (G-Suite), have budgetary analysis capabilities, aptitude for inDesign, and working knowledge of reservation management & point-of-sale systems.
Must be able to multitask and manage in high volume and high-stress environments.

Physical Requirements:
Must have manual dexterity to use and operate all necessary equipment.
Must be able to reach, bend, stoop, and stretch. Can frequently lift up to 30 pounds, occasionally lift up to 50 pounds, as well as work in a standing position for long periods of time (up to 10 hours), moving intermittently.
This is a role that requires physical stamina: carrying wine and beer up and down stairs, moving tables & chairs, and maintaining an energized presence on the floor during multiple hours of service, while moving in a space comprised of & requiring frequent access to: a basement storage area with walk-in refrigerator, two dining rooms & two kitchens on the ground floor (separated by a narrow hallway) and two mezzanine dining rooms one (1) flight of stairs up from the ground floor.
