We are looking for a CHEF DE CUISINE / HEAD CHEF:

The CDC will work closely with ownership to conceptualize, create, and develop a diverse and authentic Lebanese menu that aligns with restaurant's vision and values. You must be someone very strong with BOH operations and have done openings before + able to build a great culture with ownership as this is a new opening.

the Restaurant is an upcoming modern, hip Lebanese restaurant set to open in late 2023. Located in Brooklyn just a few blocks away from Barclays Center, between Boerum Hill and Prospect Heights.

Location is just a few blocks from BARCLAYS CENTER at the corner of 5th avenue and Prospect Place.

Place is beautiful with a massive private courtyard opening in Spring 2024.

As the Chef de Cuisine, you will play a pivotal role in bringing the authentic and innovative Lebanese culinary vision to life. You will collaborate closely with the owner, and work alongside her to ensure the successful opening of the restaurant. Your mission will involve understanding and replicating the rich Lebanese flavors while incorporating creativity within the culinary guidelines set by ownership. You will be responsible for managing the kitchen team, menu creation, recipe development, and ensuring a seamless opening process.

Key Responsibilities:

  1. Collaborative Menu Creation:
    • Work closely with ownership to conceptualize, create, and develop a diverse and authentic Lebanese menu that aligns with the restaurant vision and values.
    • Infuse creativity and innovation into traditional Lebanese dishes while maintaining their authenticity.
  2. Recipe Development and Standardization:
    • Develop detailed recipes that maintain the essence of traditional Lebanese cuisine, ensuring consistency and quality in every dish.
    • Standardize recipes and processes to meet quality standards.
  3. Opening Procedures:
    • Oversee all aspects of the restaurant's opening procedures, including kitchen setup, staff training, and menu testing to ensure a successful launch.
  4. Team Building and Leadership:
    • Recruit, train, and lead a skilled Back-of-House (BOH) team that embodies the passion and vision.
    • Provide mentorship and guidance to team members, fostering a positive and collaborative work environment.
  5. Quality Assurance and Operations:
    • Ensure that all dishes leaving the kitchen meet the established quality and presentation standards.
    • Implement operational procedures that optimize efficiency and minimize wastage.
  6. Vendor and Inventory Management:
    • Collaborate with the procurement team to select high-quality vendors and manage inventory to maintain optimal stock levels while adhering to budgetary constraints.
  7. Compliance and Safety:
    • Enforce strict adherence to health, safety, and sanitation regulations to maintain a safe and clean kitchen environment.
    • Comply with all local food safety and hygiene standards.

Qualifications:

  • Minimum of 5 years of culinary experience, including ideally experience in Lebanese cuisine.
  • Previous experience in restaurant openings, particularly in New York City.
  • Understanding of Middle eastern and Lebanese flavors, culinary techniques, and traditional Lebanese dishes.
  • Proven ability to lead and build a successful BOH team.
  • Excellent communication and collaboration skills, with the ability to work closely with the owner to bring her vision to life.
  • Passion for delivering exceptional food quality and guest experiences.
  • Knowledge of inventory management, cost control, and operational best practices.

Compensation Details

Compensation: Salary ($95,000.00 - $120,000.00)
