This is a Junior Sous Chef position for someone who is ready to take this next step in their career - whether already in a management position or looking to grow from a lead line cook to a creative mentor.
We are now fully commited to fulfilling this role as we are two months out from opening dinner service.
This position will be for an AM Junior Sous Chef to join our management team. With upcoming dinner we're looking for team members who are ready to challenge their creativity and manage a team by example and with compassion. You will start in the AM to understand the flow and dynamic of the restaurant and to build a rapport with the talented team that makes Sqirl what it is on the daily.
The Junior Sous is to work directly with the CDC and Sous in managing the Kitchen team and will have the opportunity to create dishes that are craveable with seasonality and technique at the forfront of it all.
Job Overview
- Aid the CDC and Sous Chef with Sqirl AM line duties and act as the head BOH lead on their potential days days off.
- You will go to the Santa Monica Farmer's Market to pick up produce on Wednesday and continue our decade-long relationship with our farmer friends. This offers you the opportunity to further explore seasonality, make autonomous decisions to pick up produce from the market and develop specials per your design.
- Recipe test for Sqirl At Night.
- Transition to PM when the time comes (soon!)
- Ensure that all food and products are consistently prepared and served according to the restaurant's recipes, portioning, cooking and serving standards
- Assist in overseeing inventory, purchasing and food cost via communication with CDC and Lead Prep Cook.
- Manage staffing levels to ensure that guest service, operational needs and financial objectives are met
- Ensure compliance with food handlers and sanitation standards
- Maintain complete knowledge of and comply with all departmental policies, procedures, and brand standards
- Support the Chef de Cuisine in the training, mentoring, development and management of the Sqirl staff and supervise/coordinate all related culinary activities
- Assist with completing daily, weekly, and monthly management administrative duties including operations reports, financial documentation, human resources/staff management paperwork, standard operating procedures, safety and sanitations checklists, and ordering and inventory documentation
Qualifications
- Must have experience with and a passion for fermentation and preservation
- Culinary Degree or equivalent experience
- Experience successfully leading in a fast-paced environment and prioritizing demands
- Excellent critical thinking and decision-making skills
- Able to work a flexible schedule, including evenings, weekends and holidays
