SOMOS Hospitality, the team behind Tzuco, has announced UMMO, a contemporary Italian dining concept opening in River North at 22 West Hubbard Street in July.
Helmed by Principal/Co-Founder Germán González with cuisine by Chef/Partner José Sosa and design by Karen Herold of Studio K Creative, UMMO will offer regional Italian cuisine. We are seeking Sous Chef for our brand-new restaurant in River North.

Job Summary:
We are looking for a highly skilled and motivated Sous Chef to join our culinary team. As a Sous Chef, you will play a key role in assisting the Head Chef in overseeing the kitchen operations, ensuring the delivery of high-quality dishes, and maintaining a positive work environment. Your culinary expertise, leadership abilities, and attention to detail will contribute to the success of our restaurant.
Responsibilities:
- Assist the Head Chef in planning and organizing kitchen operations, including menu development, food preparation, and recipe creation.
- Supervise and train kitchen staff, ensuring they understand and adhere to all culinary and food safety standards.
- Monitor food quality, presentation, and consistency to meet or exceed customer expectations.
- Collaborate with the Head Chef to create and update menus, taking into consideration seasonal ingredients, customer preferences, and food cost targets.
- Oversee the food ordering and inventory management process to ensure adequate supplies and minimize waste.
- Maintain a clean, organized, and sanitary kitchen environment, following all health and safety regulations.
- Assist in the recruitment and onboarding of new kitchen staff, providing guidance and support as needed.
- Lead by example, demonstrating culinary techniques, proper cooking methods, and effective kitchen management skills.
- Foster a positive and collaborative work atmosphere, encouraging teamwork, communication, and professional growth among the kitchen staff.
- Stay up-to-date with industry trends, culinary advancements, and new cooking techniques, incorporating them into the menu and kitchen operations as appropriate.
Requirements:
- Proven experience as a Sous Chef or in a similar culinary leadership role.
- Strong knowledge of various cooking techniques, culinary trends, and food presentation.
- Excellent leadership and interpersonal skills, with the ability to motivate and inspire a kitchen team.
- Solid understanding of kitchen operations, including food preparation, cooking methods, and sanitation standards.
- Ability to effectively communicate and collaborate with kitchen staff, management, and suppliers.
- Exceptional organizational and time management abilities to handle multiple tasks and prioritize accordingly.
- Attention to detail and a commitment to delivering high-quality dishes consistently.
- Flexibility to work evenings, weekends, and holidays as required.
- Culinary degree or certification from an accredited culinary institution is preferred.
