Main Role: Baker is responsible for maintaining cleanliness and organization standards
implemented within the pastry department and restaurant. Baker is to learn, execute and
maintain the quality of all bread related preparations for all menu items which are but not limited
to - artisan breads, laminated doughs, tarts, and batters. The baker works alongside the Pastry
Chef and Pastry Sous Chef to ensure mise en place is executed in a timely manner for dinner
service. When required, the baker must be open to helping the Pastry Chef and Pastry Sous
Chef to produce mise en place in the pastry department for dinner services. Cross training in
pastry preparation will be expected.
Responsibilities:
? Arrive on time for the scheduled shift and wear clean and appropriate work attire.
? Set up bread station with all mise en place and side-work needed to work efficiently.
? Break down bread station before service in a timely and efficient manner.
? Complete final breakdown and communicate with sous chef with next day product needs etc.
Health and Sanitation
? Ensure proper sanitation and personal hygiene are maintained.
? Ensure that the kitchen is always prepared for routine health inspection and following
guidelines.
Qualities Required:
? 1 to 2 years of experience in artisan breads
? Knowledgeable in areas of grains, levain, sourdough and lamination
? Must be eager to help further develop the offerings with collaboration and guidance from
the Pastry Chef and Pastry Sous Chef
? Must take initiative in self improvement
? Have a desire of interest to continuously learn and share bread related knowledge
? Punctuality and time management
? Represent Atelier Crenn professionally through your personal appearance
? Lead through action by taking care of equipment and all workstations
? Explore and listen to ideas that will help reduce waste and increase sustainability
? Strive to contribute ideas and behaviors that maintain and enhance an equal and safe

the pastry and bread department as a whole
? Must be able to lift 50 pounds.
? Must be able to occasionally climb up and down staircase.
