Zak The Baker, James Beard Nominated and Michelin Bib Gourmand recipient, is an Artisan Bakery & Cafe in the Wynwood Arts Distric of Miami, Florida. The bakery is now looking to hire a Sous Chef for the Bread Department. The Bread Sous Chef is a mid level leadership position, responsible for leading production, and team.
Qualified candidates should have:
- Culinary degree is preferred
- Minimum of 5 years of professional experience in a high quality kitchen
- Excellent communication skills
- Leadership experience
Responsibilities
- Monitor and Manage Standard Operating Procedures
- Monitor and Manage Quality Control of Craft
- Monitor and Manage Food Safety Compliance
- Write Daily Reports
- Assist Chef w/ Training
- Assist Chef w/ Performance Management
- Assist Chef w/ Recipe Development
- Assist Chef w/ Finance Budgets and Targets
- Assist Chef w/ Recruitment
Requirements
- Minimum 5 years experience in a professional bread bakery OR professional pastry bakery OR professional savory kitchen
- Preferred: Advanced knowledge in natural leavens, preferments, dough development, oven management, and recipe development
- Preferred: Culinary Degree
