Kiln is a tasting menu restaurant opening in Hayes Valley later this summer and we are currently seeking a Sommelier / Wine Director to join our Service Team.
This is a full-time, salaried position with opportunity for growth and will require working closely and collaboratively with all other members of the team - service and kitchen. This is also a manager-level position and is not exclusively limited to beverage. A typical work week will be 5 days, for ~50 to 55 hrs per week. Ideal candidates will be focused, hard working, efficient + service-oriented, dedicated to maintaining organization of the beverage program, passionate about education and committed to the preparation and execution of our service standards.
Qualifications
This is an ideal position for someone who is dedicated to providing great service and is seeking to become a member of a hard-working and ambitious team.
- General proficiency in wine; equivalent of WSET level 3 and/or Court of Master Sommeliers Intermediate or above preferred
- Previous experience as a sommelier
- Comprehensive knowledge of spirits, digestifs, and liquors from around the world
- Proficiency in classic cocktails, low-ABV cocktails and cocktail development
- Understanding of financials associated with wine, (low-ABV) spirits and NAB
- Have at least 1 year of management experience in a fast-paced, high-intensity tasting menu setting
- Have strong understanding of food and wine pairing
- Have experience in organizing wine cellars and building inventories
- Ability to educate in an approachable manner on wines from around the world
- Be willing and able to work nights and weekends
Responsibilities
- Helping to manage and work the floor as the lead sommelier for nightly service. Touching tables, running food, clearing/marking, overseeing staff, and assisting in anything service-related is key.
- Management of wine + beverage program for a tasting menu restaurant. Includes but not limited to: creation of SOPs surrounding all beverage operations, quality control for all beverage products selected and/or produced for the program, cost management, purchasing, organization and storage logistics and systems for all beverage wares and supplies, beverage storage area cleanliness, edits and additions to all beverage menus, oversight over all NAB, including coffee and tea, bottled water, sodas and beers; monthly and/or weekly beverage inventory, including inventory count, data entry and validation; monthly and/or weekly reporting and data analysis as required
- Selecting, purchasing, building and managing a world class wine list
- Binning, organizing and stocking bottles and cases
- Cocktail creation (as required)
- (Split days) Opening duties, including restaurant walk-thru to ensure the restaurant is ready for service, checking opening emails, conducting pre-shift with staff, and handling service demands as needed
- (Split days) Closing the restaurant, including writing daily recaps, reconciling closing banks, and doing the final restaurant walk-through
- Helping to manage all employees, including assisting in training, support, performance management, and discipline
- Participating in management meetings
- Stand and walk for an entire shift, including moving safely through all areas of the restaurant which may include stairs, uneven, and/or slick surfaces
Physical Requirements
- Lift and move up to 10 pounds; frequently lift and/or move up to 25 pounds; and occasionally lift and/or move up to 50 pounds
- Safely and effectively use all necessary tools, equipment, and cleaning chemicals
- Stand and walk for an entire shift, including moving safely through all areas of the restaurant which may include stairs, uneven, and/or slick surfaces
- Ability to bear exposure to hot and cold environments
