Cooking in Paris and discovering the produce and marketplaces in France changed Chef Austin Johnson’s perception of what ingredients can be. When he returned to New York and began making plans for One White Street, he sought the same standard of beautiful, fresh and thoughtfully raised vegetables.
This pursuit led him to Eliot Coleman, a prolific farmer and proponent of small-scale organic farming who has advocated for sustainable agriculture during his over fifty-year career. Johnson worked with Coleman and farmers Danny Morales and Katey VanKerkhove to build Rigor Hill Farm in Columbia County in upstate New York, which provides One White Street with produce year-round—from farmers market mainstays to specialized, hard-to-find ingredients, flowers and even hops for the restaurant’s house beer.
