Job Description
At Somewhere Nowhere (SWNW) we’re looking for happy, creative, energetic, ambitious, and positive people to join our team. The Line Cook must prepare meals as per our standard recipes. He/she will be responsible for creating meal portions, cleaning food, cooking meals and keeping a sanitized work area. This individual must have experience in the food service industry and be committed to impeccable food presentation and garnishing. Additional requirements below:
General Responsibilities
- Complete opening and closing checklists
- Cook and prepare a variety of food products using a variety of equipment and utensils according to the Daily Prep List
- Follow and prepare all recipes according to recipe book
- Responsible for ensuring the cleanliness, sanitation and safety in the kitchen and work areas while minimizing waste and maximizing cost/production ratio.
- Prepares a variety of meats, seafood, poultry, vegetables and other food items for cooking
- Understands and complies consistently with our standard portion sizes, cooking methods, quality standards and kitchen rules, policies and procedures
- Portions food products prior to cooking according to standard portion sizes and recipe specifications
- Have thorough knowledge of menus and the preparation required, according to SWNW standards
- Prepare basic components of each dish on our menu using our proven recipes. Prepare and properly garnish all food orders in accordance with menu specifications.
- Memorize and utilize our serving portion sizes and all basic meal prep procedures used in the kitchen
- Must keep up with culinary trends and techniques
- Follow the standards and plating procedures of the Chef/Kitchen Manager
- Complete necessary food and station preparation prior to opening in order to ensure that guests are served promptly and efficiently during operating hours
- Recognize quality standards in fresh vegetables, fish, and dairy and meat products
- Knowledge of herbs and spices and proper use of each
- Maintain clean, sanitary kitchen equipment and work station with knowledge of proper handling, sanitation and organization of all storage areas.
- Use prep list as specified by standards
- Ensure that the kitchen, all food prep areas and all food storage areas meet cleaning standards
- Work with team to do portion prep work for other shifts when needed
- Monitor product freshness and rotate out old product based on a schedule created by the venue
- Remove labels and properly label all food items
- Properly store and label food to health department standards
Required Skills
- 4+ years’ culinary experience in a comparable hotel environment
- High level of creativity and reliability
- Flexible schedule required
- Willingness to work in hot, humid environment and on your feet for 8 hour shifts
- High level of professionalism
- Comfortable working with a team in a fast-paced kitchen environment
- Excellent verbal communication and organization skills
- Must be able to lift at least 40 pounds at a time on a regular basis
