Facilities 

  • Ensures that all event and bar areas are setup/maintained and laid-out as designed and according to established floor plans and BEOs; 
  • Ensure that all equipment is kept clean and kept in excellent working condition through personal inspection and by following the restaurant’s preventative maintenance programs; 
  • Ensures that all music and lighting is executed as per established standards and guidelines; 
  • Ensures that all furniture, fixtures and equipment in both front and back of house is maintained in a picture-perfect state of maintenance; 
  • Will coordinate repair and maintenance of all FF&E with director of restaurants, director of facilities, and outside vendors as required; 
  • Coordinates with Catering department in the set-up breakdown of all restaurant and bar spaces being used for events and ensures that all spaces are returned to their original condition and layouts 

Service & Product Development 

  • Ensures that all departments under his/her control are operating to the established standards and guidelines; 
  • Ensures that self and Events Captains are monitoring and correcting service breakdowns daily; 
  • Ensures aggressive floor presence for all managers including self; 
  • Ensures a pro-active approach to guest service from both managers and team members; 
  • Ensures the deployment of Service Recovery standards as required to ensure complete guest satisfaction; 
  • Ensures team member knowledge of all food and beverage menu items and upselling; 
  • Participates and executes in the production, supply and execution of all food and beverage menus; 
  • Fills in where needed to ensure guest service standards and efficient operations; 

Sales Related 

  • Develop action plan for continued check falls below budget; 
  • Develop action plan for upselling food and beverage items; 
  • Review Catering Banquet Event Orders, reviews with teams and implements accordingly; 
  • Ensures standards for handling of small groups are in place and actioned ; 

Inventories 

  • Ensures weekly food, beverage, supplies, china, glass and silver inventories are completed and updated; 
  • Ensures maintenance of established pars for all above items; 
  • Ensures timely purchasing of above items according to budgeted guidelines; 

Personnel 

  • Directs the hiring of all team members according to established standards; 
  • Hiring and HR compliance is done to standard; 
  • Responsible for ensuring successful training of new team members; 
  • Ensures all team members are fully trained and can perform Service Recovery; 
  • Makes employment and disciplinary (in cooperation with HR) decisions; 
  • Fill in as needed to ensure guest service standards and efficient operations; 

Payroll 

  • Schedules labor as required by anticipated business activity while ensuring that all positions are staffed when and as needed and labor cost objectives are met; 
  • Reviews weekly forecast volume in covers; 
  • Reviews scheduled hours in line with volume range; 
  • Ensure all overtime is authorized; 
  • Decrease or increase staffing as required; 
  • Review weekly payroll for accuracy, team member attendance, correct payout of tips, etc.; 
  • Complete Absence Request Form for all approved benefit time and submit to Human Resources; 

Public Relations & Marketing 

  • Informs Executive team of any celebrities and VIP visiting the facilities; 
  • Ensures privacy standards are adhered to for visiting celebrities and VIP’s; 
  • Works in coordination with Director of Operations, PR Company, and Director of Catering in the execution of all high profile events in food and beverage spaces as needed; 
  • Is knowledgeable of restaurant policies regarding personnel and administer prompt, fair and consistent corrective action for any and all violations of company policies, rules and procedures; 
  • Fully understands and ensures compliance with all federal, state, county and municipal regulations that pertain to health, safety and labor requirements of the restaurant, employees and guests; 

Safety & Security 

  • Is a member of the Safety & Compliance Committee; 
  • Ensures team members are fully conversant with Emergency Procedures; 
  • Monitors all front and back of house areas for safety hazards; 
  • Ensure the following is adhered to: Storerooms and refrigerators are locked; Back door(s) is/are secured, Overnight security procedures are established and performing their duty where applicable, Bar doormen are maintaining crowd control and dining room safety where applicable 

General 

  • Understand completely all policies, procedures, standards, specifications, guidelines and training programs; 
  • Achieve company objectives in sales, service, quality, appearance of facility and sanitation and cleanliness through training of employees and creating a positive, productive working environment; 
  • Ensure service to all guests follows established standards, is consistent, efficient and courteous 
  • Prepare all required paperwork, including forms, reports and schedules in an organized and timely manner; 
  • Knows emergency procedures (including CPR) and work to prevent accidents; 
  • Knows and adheres to all liquor liability laws; 
  • Is knowledgeable of restaurant policies regarding personnel and administers prompt, fair and consistent corrective action for any and all violations of company policies, rules and procedures; 
  • Fully understands and comply with all federal, state, county and municipal regulations that pertain to health, safety and labor requirements of the restaurant, employees and guests; 
  • Performs other duties as directed by senior management.

Compensation: Salary ($85,000.00 - $95,000.00)
