RESTAURANT GENERAL MANAGER

Job Overview:

The General Manager is responsible for managing the direction and organization of:

- the Restaurant & Bar outlet, Nido

- the 8th floor Private Events Space

with emphasis on delivering outstanding guest service, employee productivity, and financial profitability.  The director is responsible for increasing sales and minimizing costs, ensuring increasing profitability within the Restaurant outlets.  Working alongside the Executive Chef, the General Manager oversees all aspects of guest service, food and beverage quality, inventory management, outlet reservations and occupancy, systems management, budget and forecasting.  The Director oversees front of the house management, monitoring and developing team member performance including providing supervision, training, coaching, recognition, reward, discipline, and conflict resolution. In addition, the director also spearheads compliance with health, safety, sanitation and alcohol awareness standards.    

Reports To:

Executive Chef for support, partnerships and brand standards. 

Supervises:

Restaurant Managers, Assistant Managers, Bar Managers, and all FoH staff

Key Relationships:

Internal:

  • Executive Chef, F&B Managers, HR, Payroll, Accounting, Reservation, Events, Sales, Catering, Reservations 

External:

  • Hotel guests, visitors, vendors, special events guests, entertainers

Work Area:

See above, but not limited to (ie may include offsite events or supporting other sister properties as directed by ownership/EC)

Qualifications and Requirements:

Essential:

  • Understanding: Ability to read, comprehend and carry out instructions according to established procedures
  • Comprehension: Fluent in the English language
  • Organizational Skills: Work efficiently, utilize multi-tasking, prioritize tasks
  • Hygiene and Sanitation: Adherence & Enforcement of uniform, grooming and personal hygiene standards and expectations per Standard of Operating Procedures
  • Punctuality: Adherence & Enforcement of posted schedules, arrival time and attendance at mandatory meetings 1
  • Responsibility: Personal comportment in line with The Loren Hotels policies, standards, and expectations

Essential Job Functions and Responsibilities:

  • Directly responsible for guest needs and service in restaurant and related areas of hotel
  • Set operating goals and objectives
  • Prepare, implement, and innovate standard operating procedures
  • Recruit and process staff for outlets where and when necessary
  • Manage the hotel Beverage Program in conjunction with Executive Chef, including overseeing ordering, menu changes, training, inventory, COGS targets, and bartender/brand partnerships
  • Initiate and complete training of said staff, including all required documentation and tests
  • Work closely with Restaurant Management Team regarding matters of reporting, ordering and controls 
  • Responsible for proper training materials for new floor hires inclusive of SOPs, testing, and auditing
  • Maintain positive online feedback
  • Comply with and maintain The Loren Hotels Brand Standards within Food and Beverage operations

Specific Accountabilities:

  • Responsible for supporting Restaurant Management Team in appearance and upkeep of the F&B outlets, including FF&E, OS&E, Payroll and Monthly Budget.
  • Responsible for quality of service presented to all guests in all outlets

Employee Direction: 

  • Lead several shifts per week in each outlet, and to ensure there is sufficient coverage of each scheduled shift that you are leading.
  • Ensure all Floor Staff side work is satisfactorily completed pre and post shift. 
  • Ensure Floor Staff are performing to standard during shift, if not over and above.  
  • Continue to train staff on product knowledge, protocol and any policy/procedure changes.
  • Oversee floor staff, ensuring that they adhere to conduct requirements as per Employee Handbook/SOPs.
  • Act as the lead in writing SOP’s and delegating duties to floor staff to facilitate day-to-day operation of the Restaurant and be able to fulfill other duties as assigned my management (see above).
