Job Details
Upscale casual restaurant on Upper East Side seeking AM Production Sous Chef. Candidates must have proven prior leadership experience, including at least 2 years as a Sous Chef, and a reference. It is essential for the successful candidate to be able to lead by doing (e.g., leading by example) to effectively lead experienced crew.

The Sous Chef will oversee and participate in all AM Production activity in the kitchen.

Essential Functions
1. Provide hands-on assistance to staff with AM food production, including making sauces and stocks.
2. Labelling, inventory control and kitchen safety, including temperatures of food and refrigerators.
3. Make periodic and regular inspections of units to observe quality of food preparation and service; food appearance; and cleanliness and sanitation of production and service areas, equipment and employee appearance.
4. Coordinate all training activities for AM production, including the identification and analysis of training needs and the design and implementation of programs to address these deficiencies.
5. Assist in managing AM production staff labor and food costs.
6. Escalate instances of AM Production staff lateness or absences to Executive Chef.
7. Perform other related duties incidental to the work described herein.

Compensation Details

Compensation: Salary ($75,000.00 - $90,000.00)
