We are seeking an ambitious, hard-working, and passionate Chef de Cuisine to join the team!


Position Summary

The Chef de Cuisine is a leader responsible for the health and wealth of the restaurant. Responsible for all kitchen functions, including food purchasing, preparation and maintenance of quality standards, sanitation & cleanliness, training of employees in methods of cooking, preparation, plate presentation, portion, and cost control. This job can potentially cover both DC & Rehoboth restaurants, depending on skill and availability.

 

Duties and Responsibilities

  • Promote, work, and act in a manner consistent with the mission of Equinox Restaurant.

  • Oversee all aspects of the daily operation of the kitchen and food production areas ensuring safety, quality, recipe accuracy, and financial profitability.

  • Ensure that all needs of guests are accommodated.

  • Monitor sanitation practices to ensure that employees follow standards and regulations.

  • Responsible for maintaining appropriate cleaning schedules and upkeep of kitchen floors, mats, walls, hoods, other equipment, and food storage areas.

  • Manage P&L, food cost, and inventory.

  • Ability to order products within budget.

  • Determine production schedules and staff requirements necessary to ensure the timely delivery of services.

  • Collaborate with other personnel to develop recipes, plan, and price menu items, establish portion sizes, and prepare standard recipe cards for all new items.

  • Ensure that all food and products are consistently prepared and served according to the outlet s recipes, portioning, cooking, and serving standards.
