We are seeking an ambitious, hard-working, and passionate Chef de Cuisine to join the team!
Position Summary
The Chef de Cuisine is a leader responsible for the health and wealth of the restaurant. Responsible for all kitchen functions, including food purchasing, preparation and maintenance of quality standards, sanitation & cleanliness, training of employees in methods of cooking, preparation, plate presentation, portion, and cost control. This job can potentially cover both DC & Rehoboth restaurants, depending on skill and availability.
Duties and Responsibilities

Promote, work, and act in a manner consistent with the mission of Equinox Restaurant.

Oversee all aspects of the daily operation of the kitchen and food production areas ensuring safety, quality, recipe accuracy, and financial profitability.

Ensure that all needs of guests are accommodated.

Monitor sanitation practices to ensure that employees follow standards and regulations.

Responsible for maintaining appropriate cleaning schedules and upkeep of kitchen floors, mats, walls, hoods, other equipment, and food storage areas.

Manage P&L, food cost, and inventory.

Ability to order products within budget.

Determine production schedules and staff requirements necessary to ensure the timely delivery of services.

Collaborate with other personnel to develop recipes, plan, and price menu items, establish portion sizes, and prepare standard recipe cards for all new items.

Ensure that all food and products are consistently prepared and served according to the outlet s recipes, portioning, cooking, and serving standards.
