Job Description
Proper hospitality is looking for an experienced Sous Chef .The ideal candidate will have an excellent understanding of the overall operations for the back of house and kitchen area. In addition to having a record of kitchen and staff management. Applicants must be able to accurately and efficiently work full service shifts. Experience in a full service restaurant is required. Hotel restaurant is preferred.
Responsibilities:
Administrative-
- Invoice coding
- Updating and costing order guides, to include, dairy, protein, produce, dry goods
- Updating pars
- Perform monthly inventory, to include, dairy, dry produce, protein, kitchen liquor, bread, plate ware
- Update and print prep list for all stations (AM/PM)
- Type and update recipes as needed to include cost
- Manage menu matrix
- Update Kitchen SOP's as needed
Kitchen-
- Manage line cooks, prep cooks and expediters
- Receive orders and inventory of kitchen pars daily
- Check rotation of product and daily productivity for all outlets
- Maintain all kitchen maps
Requirements:
- 3+ years of experience as a Sous Chef
- At least 6 months experience in a similar capacity.
- Flexible schedule a must
- Understanding of various cooking methods, ingredients, equipment and procedures
- Excellent record of kitchen and staff management
- Familiar with industry’s best practices
- Working knowledge of various computer software programs (MS Office, restaurant management software, POS)
- BS degree in Culinary science or related certificate would be a plus
- Licenses or Certificates:
- ServSafe Food Handler Certification is a prerequisite for this role.
Per San Francisco City Ordinance, candidates must be fully vaccinated for COVID-19 to be considered for this position.

Compensation Details
Compensation: Salary ($68,000.00 - $75,000.00)
