Job Details

The Dinex Group, is looking for a Sushi Prep Cook for our new Japanese inspired concept.

Sushi Prep Cook duties will include but not limited to prep cook duties, supporting the chefs. Will include tasks such as cleaning, dishwashing, while maintaining impeccable sanitation standards. 

Schedule: 
Full-time schedule; open availability preferred. Hours and days may vary; more details upon interview.

Requirements: 

  • Ability to follow exact recipe ingredients and procedures for all items that come from Sushi production including but not limited to Maki, Temaki, Nigirl, Sashimi, Poke, Crudo.
  • Ability to perform a variety of fish fabrication techniques
  • Ability to maintain the highest standards Food Safety and Sanitation practices with attention to detail

Skills, Abilities and Experience:

  • 2+ years of work in a  Sushi restaurant
  • Ability to prepare fish (fish monger, fish butchery).
  • Previous New York restaurant experience is a plus but not mandatory.

Education/Credentials:

  • NYC Food Protection Course Certification (preferred)

Beneath his marquee restaurant Le Pavillon on the second floor of One Vanderbilt, Daniel Boulud is working with the building’s developer, SL Green Realty Corp., to create a restaurant in One Vanderbilt, connected to Grand Central Terminal. It will be inspired by the fine sushi restaurants in Tokyo’s train halls. The sushi chef, George Ruan, who was at Masa, is leading the restaurant, and Shinichiro Ogata, the founder of Simplicity Design, is designing the space, which has a 10-seat counter, an 8-seat private room and natural elements. Mr. Boulud calls it a “sanctuary for sushi connoisseurs.” It is to open Sept. 14.
