Duties and Responsibilities:
· Coach management teams to ensure proper inventory levels of wine, liquor, and beer
· Work with vendors to secure best pricing for all wine, liquor, and beer
· Notify Directors of Operations about any suggestions, feedback, or changes at each restaurant location
· Ensure all Verre de Vin equipment is functioning properly
· Make sure all locations are trained on proper use of Verre de Vin
· Work with Director of Human Resources to develop, implement, and track wine training programs for all restaurants that adheres to Fearless standards
· Work with management teams to ensure all front of house staff is Wine Service Certified
· Host monthly beverage training at each restaurant location for staff
· Host continual education for beverage related classes for management
· Develop a semiannual curriculum for wine education at each restaurant
· Assist with creating content for training in the learning management software
· Provide and council store level management on proper storage and organizational needs for unit wine program (wine fridges, wine rooms, bar)
· Create and enforce standards for wine, cocktails, and beer at all Fearless locations
· Be available and participate in PR appearances
· Host wine events at Fearless locations
· Ensure proper inventory levels of restaurant operating supplies
· Update current wine, beer, and cocktail lists at existing locations
· Provide training materials to the Director of Human Resources after each menu change
· Assist with training managers at the unit level on ordering
· Assist and approve all inventory counts
· Responsible to train managers to ensure vintages are correct in stock and on menu
· Audit wine rooms to ensure vintages are correct
· Audit POS to ensure accuracy for pricing and menu items on a monthly basis and after each menu change
· Responsible to participate in service in all locations to provide feedback and training to servers, bartenders, etc.
· Generate ideas and solutions on how to improve current beverage program
· Set up a speaker schedule for each location using purveyors, wine makers, and viticulturalists
· Build and maintain relationships with local, national, and international wine makers
· Maintain involvement in the Court of Master Sommeliers
· Continue personal learning and development toward advanced level Sommelier
· Schedule field trips quarterly to local wineries and breweries
· Build wine, cocktail, and beer lists for new restaurant concepts
Education and/or Work Experience Requirements:
· Extensive knowledge of food menu and drink lists
· Be able to work in a fast-paced environment while maintaining the highest level of hospitality
· Prior knowledge about POS system or ability to learn quickly
· Prefer at least 2 years of management experience in an upscale casual environment with alcohol
· RAMP certification is required prior to beginning work
· ServeSafe certified or equivalent
· Bachelor’s degree required
