Rosetta Hall is hiring a kitchen manager to oversee all purchasing and recieving for the food department, as well as our prep and porter teams. We are a unique operation with 8 individual food stalls, each supplied by our common commissary which the Kitchen Manager oversees. This is the ideal job for an someone who enjoys coordinating between many different people and purveyors. It is a hands on job. You will work with the chef management team to do the following
Leading the prep & porter teams
- Training new hires
- Set clear expectations for the teams. Follow up with them to ensure expectations are being met
- Communicate staffing needs or concerns to the executive chef
Purchasing
- Inventory and order all supplies for the food department
- Receive all order and check in products for accuracy and quality
- Maintain productive relationships with vendors and suppliers
- Rotating the physical inventory to ensure freshness and quality
- Work with the executive chef and chef de cuisines to source ingredients for menu changes
- Proactively find solutions when products are unavailable
- Conducting the period end physical inventory with the chef team
- Sourcing competitive bids for similar products
Production
- Manage the daily prep lists- organize, prioritize and delegate
- Ensure proper product rotation and par levels are met
- Anticipate changes in business and menu changes- adjust pars accordingly
Administration
- Scheduling & approving hours
- Updating the order guide with current pricing, new ingredients and retiring old product
- Submit invoices to accounting department
- Work with the chef team to ensure prep lists are kept up to date
