Foreman Wolf is an award winning Baltimore-based restaurant group led by food and wine pioneers Tony Foreman and Cindy Wolf. Foreman Wolf is recognized nationally for inventive, beautiful cuisine, exceptional service, treasured wine programs, and inviting décor.

We are hiring a Sous Chef at Charleston, our flagship award winning restaurant established in 1997 on Baltimore's beautiful waterfront.

The ideal candidate is an experienced line cook who is looking to move up or a sous chef that would like to be a part of our team.

Charleston is based on classic french principals and is influenced by the seasons, regional game, seafood and produce - with some remaining low country influences.

The menu is a tasting format that does not limit the guest in any way, allowing them to choose any items on the menu.

You must be eligible to work in the United States.

Position Overview:

The Sous Chef is responsible for assisting the Executive Chef with a variety of kitchen management and activities.

Principal Duties and Responsibilities:

  • Make regular and periodic inspections of units to observe quality of food preparation and service; food appearance; and cleanliness and sanitation of production and service areas, equipment and employee appearance
  • Teach and mentor staff in company culture, policies and procedures
  • Provide instruction and training to cooks and kitchen staff
  • Prepare and execute kitchen for prep and service
  • Ensure proper kitchen closing procedures
  • Facilitate and assist with managing supply, ordering and daily prep list
  • Organize and complete daily prep before service
  • Brief service staff on menu and daily specials when necessary
  • Assist in hiring, training, coaching and mentoring employees
  • Assist in menu planning activities
  • Tend to maintenance and equipment issues in kitchen when necessary
  • Assist the Executive Chef in meeting profit and loss goals
  • Act in place of Executive Chef during absence
  • Other duties and responsibilities may be assigned or changed at any time
