Summary of Position
The Chef de Cuisine is responsible for maintaining a thriving and profitable organization of well-trained passionate people celebrating hospitality and creativity. They are a true hospitalitarian, supporting excellence in every facet of the guest experience. They are a smart-creative, a keen strategizer, and visionary. They create and maintain a balanced, engaging, competitive and nationally recognized business that sets standards in the food, beverage, and hospitality programs. They oversee and coordinate the operations of the business and plans, organizes, trains, and leads to achieve stated objectives in sales, costs, employee retention, guest satisfaction, product quality, cleanliness, and sanitation.
Responsibilities will include:
- Maintaining the consistency and deliciousness of all menu items and supporting excellence in service at all times
- Managing kitchen personnel and supervising/coordinating all related culinary activities
- Estimating food consumption and requisition or purchase food
- Selecting and developing recipes
- Standardizes production recipes to ensure consistent quality
- Establishes presentation techniques and quality standards
- Plans and prices menus
- Ensures proper equipment operation/maintenance
- Upholds proper safety and sanitation in the kitchen
- Directly supervises kitchen personnel with responsibility for hiring, discipline, performance reviews and initiating pay increases
Education/Experience
- 5+ years’ experience in a back of the house leadership position
- Degree from accredited culinary school
- Working knowledge of Microsoft Word, Outlook 365 and Excel
- Full understanding of culinary techniques
- Excellent knife skills
- Good organizational skills
- Ability to manage and supervise multiple teams at the same time
- Ability to train and teach
- Appreciation of our current context in the scope of culinary history
