Job Details

Za Za Zá in Frogtown neighborhood is looking for Cevichero/Lead Cook to join our team!  This is a hybrid FOH/BOH guest-facing position for someone who has experience working with food and enjoys sharing their love for food with guests.  The Cevichero/Lead Cook will be stationed at the raw bar to prepare seafood dishes, take orders, and interact with guests.

Part-Time & Full-Time available.  Will be included in FOH pooled tip.

Responsibilities:

  • Taking full orders for bar guests
  • Preparing ceviche and raw bar dishes
  • Learn specs for all menu items to educate guests when needed
  • Prepare menu items following recipes and yield guides according to standards
  • Understand and apply the correct use of kitchen equipment with respect to safety and maintenance
  • Comply with all culinary and mandatory staff training
  • Cold and hot line for dinner and lunch service
  • Demonstrate efficiency when applying company standards and rules
  • Maintain and strictly abide by state and city health code regulations
  • Ensure that food leaving the kitchen/station is checked for quality, quantity, presentation and correct temperature according to established standards
  • Report any maintenance deficiencies in a quick and timely way
  • Maintain a professional relationship with all restaurant personnel
  • Actively involved in maintaining and restocking of necessary ingredients/items
  • Adhere to dress code policy in addition to following good personal hygiene habits
  • Follow all guidelines in the Mariscos Za Za Zá Kitchen Manual

Requirements:

  • Valid Food Handler’s certificate
  • Valid RBS certificate
  • Experience working with fish and shellfish preferred
  • Experience working in both FOH & BOH preferred
  • Experience working kitchen expo preferred
  • Knowledge of Toast POS or similar POS system preferred
  • Lead Cook/Chef de Partie experience preferred
  • 2+ years work experience in fine dining and/or high-volume establishment
  • Positive attitude, sense of responsibility and ownership of the position
  • Possess attention to detail
  • Be comfortable with repetitive motions such as walking, bending and standing during your scheduled shift
  • Be able to lift and carry at least 50 pounds
