Job Details

Overthrow Hospitality is looking for a Chef de Cuisine to join us in the East Village. We are looking for a hospitality professional to take the lead and ensure that the restaurant's menu and identity is maintained at all times. This individual will be responsible for the daily kitchen operations of the restaurant. is prepared properly, safely, and tastily. The Chef de Cuisine will also manage the kitchen operations of direct reports, like sous chefs and line cooks.

You are someone who has a passion for food, a proven track record of great food and even greater leadership and is able to work well with others, all while remaining motivated, energetic and passionate about what we do.
We have broken down the position into five Core Responsibilities:  

  • Administration & Property Management: This includes but is not limited to active communication with the Operations Team, HR compliance, facility & equipment maintenance issues, closing/opening procedures, weather related services, receiving management and repairs needed.
    • Ensures all equipment in the kitchen is properly maintained and in working order
    • Ensure all products are prepared in a consistent manner and meet departmental appearance/quality standards.
    • Ensure compliance with insurance, legal, health and safety obligations.
    • Complete EOD Reports in the manager's absence. 
    • Keep Founder & Director of Ops promptly and fully informed of all issues (i.e. problems, unusual matters of significance and positive events) and take prompt corrective action where necessary or suggest alternative courses of action.
    • Complete all job responsibilities and performance objectives in a timely manner.
    • Respond efficiently to email, slack & all work related correspondence.

  • Staff Management & Team Development: Recruits, hires, reviews, trains and schedules team members for each property and is responsible for their team’s service performance (steps of service), quality and consistency.
    • Provide direction to employees regarding operational and procedural issues.
    • Hire and train new kitchen staff 
    • Interview all employees. Direct hiring, supervision, development and, when necessary, termination of employees. 
    • Conduct orientation, explain Overthrow Hospitality philosophy, and oversee the training of new employees.
    • Develop employees by providing ongoing feedback, establishing performance expectations and conducting performance reviews.
    • Issue necessary disciplinary documentation and follow disciplinary progress procedure.
    • Trains, develops and motivates culinary staff to meet and exceed established food preparation standards on a consistent basis. 
    • Maintain a safe, secure and healthy facility environment.
    • Maintain operations by preparing policies and standard operating procedures; implementing production, productivity, quality, and patron-service standards; determining and implementing system improvements
    • Attend weekly team meetings.

  • Food Safety, Health & Hygiene: In addition to being NYS Food Handler certified, you are responsible to ensure that each property meets all the required DOH protocol and passes state & local inspections with the highest letter grade/performance rating and ensure all staff are aware of food allergies and aversions by building systems of awareness and reinforcing health protocols.
    • Must be DOH certified.
    • Uphold all DOH guidelines and standards.
    • Enforce sanitary practices for food handling, general cleanliness, and maintenance of kitchen and dining areas, including daily “walk-thru.” 
    • Ensure compliance with operational standards, company policy, federal/state/local laws, and ordinances.
    • Maintain professional restaurant image, including restaurant cleanliness, proper uniforms and appearance standards.
    • Ensures all kitchen employees maintain required food handling and sanitation certifications.
    • Ensures compliance with food handling and sanitation standards.
    • Follows proper handling and right temperature of all food products.

      

  • Culinary Operations: Maintain patron satisfaction and sales metrics by monitoring, evaluating, and auditing the quality and consistency of the food program; initiate improvements while building relationships with the Culinary Team,  Front of House staff and Patrons.

    • Ensure proper purchasing, receiving and food storage standards in the kitchen.
    • Maintain quality levels of receiving, storage, production and presentation of food.
    • Follows and enforces all applicable safety procedures specified for kitchen and food servers; making all staff aware of allergens/aversions.
    • Order and arrange pickup or delivery of foods for the week
    • Coordinate and direct all food preparation, from prep through service
    • Monitor the quality of all food and beverages
    • Track, record, and maintain inventory stock including foods, beverages, and kitchen supplies
    • Teaches preparation according to well defined recipes and follows up and discusses ways of constantly improving the cuisine at the property.
    • Should be able to provide direction for all day-to-day operations in the kitchen.
    • Actively involves in menu development and maintaining updated and accurate costing of all dishes prepared and sold in the Food and Beverage operation. 
    • Determines how food should be presented, and creates decorative food displays.
    • Recognizes superior quality products, presentations and flavor.
    • Tasting food quality, and monitoring kitchen ticket times.
    • Creating innovative ideas to streamline dinner service and up-selling strategies.
