Job Details

We are looking for experienced Line Cooks in Japanese Cuisine to join our restaurant, Kaiseki Room by Yamada, in Midtown NYC to prepare delicious and intricately composed Japanese dishes for our guests.

To be successful in this role, you should have experience with traditional Japanese cuisine, extreme attention to detail, and be available to work during our opening hours.  Ultimately, you will work under Chef Yamada and his culinary vision.

Kaiseki Room by Yamada is in a modest 600-square- foot Midtown space at 145 West 53rd Street, near 6 ½ Avenue, Yamada focuses on a wholly Japanese menu with some high-end touches. His dedication to Japan’s highest form of culinary art is to be featured in an 11-course, hyper-seasonal kaiseki omakase.

Qualifications:


  • Work experience as a Line Cook at a Japanese restaurant
  • Knowledge of various Japanese cooking techniques
  • Ability to work both fast and accurately
  • Positive and team spirit
  • Availability to work during business hours, including weekends and evenings
  • Proven experience working in upscale Japanese restaurants
  • Valid food handler's certificate
  • Sound knowledge of food safety regulations
  • The ability to work under pressure
  • The ability to stand for long periods of time
  • Excellent time-management skills
  • Exceptional customer service skills

SENSORY
The design of Kaiseki Room is inspired by the calm, thoughtful nature of the zen Japanese tea ceremony. Upon entering, guests are immediately transported to another place, far from the bustle of the busy midtown neighborhood. Undulating carved woods hug the edges of the room, at once gently sloping and soaring, making guests feel protected and welcomed in this highly unique space.

DISCOVERY
Chef Yamada calls on his many years of experience preparing traditional kaiseki cuisine to constantly reinvent his seasonal dishes with contemporary preparations, presentations and techniques, ensuring that guests always have a most unique experience. His signature dishes - donabe rice and hassun - constantly undergo exciting evolution as he seeks to source and showcase the finest ingredients at the peak of their freshness. He derives joy from always presenting something new to his guests, who frequently return to try his latest creations.

JOYFUL
While the Japanese zen tea ceremony inspires a certain tone of reverence and seriousness, Chef Yamada’s style of presentation and service is good-natured, friendly and approachable.
