Job Details

Job Summary: This position is responsible for the supervision and overall operations of the kitchen. The Kitchen Manager will ensure the restaurant standards are upheld; all food menu items are consistent, and cooked properly, the portion sizes are correct and it is cooked and served in a timely fashion. This position is direct supervisor of hourly kitchen staff and the primary focus of this position will be to train and maintain the food quality and sanitation standards, and ordering of food products. This position, with the General Manager will maintain budgeted food cost, labor cost, and will assist with the hiring and training of all new Kitchen Staff.

Responsibilities

Operational Duties:

  • Work with Management Team to ensure we serve only the best to our guests
  • Maintain all staffing levels for BOH.
  • Work with Management Team to maintain sanitation standards.
  • Supervise and ensure proper orientation, proper training and certification of new BOH.
  • Maintain food cost, labor cost and controllable budgets at or below budgeted percentages with GM
  • Maintain scheduling for all BOH with GM
  • Maintain all food safety systems, company safety standards and programs.
  • Communicate to General Manager any maintenance issues.
  • Bilingual/Spanish is a plus

Daily Shift duties

  • Conduct multiple daily line checks /review with management and BOH team.
  • Review prior shift notes, sales, set daily goals
  • Do a daily sanitation walk through.
  • Review food cost goals. Communicate daily to staff.
  • Set daily production and monitor throughout the day.
  • Review daily order needs/place orders as needed.
  • Maintain daily invoices with GM
  • Ensure receiving guidelines are in place.
  • Review and update daily shifts
  • Ensure all shifts run smoothly and are set up for success.
  • Create monthly special food night
  • Ensure smooth shift changes
  • Work with management team to ensure meal breaks are taken.
  • Review large parties/catering orders with GM
